What Have You Cooked Recently?

I'm slow cooking a pork sirloin in Bulldog sauce, mirin, and dried chiles. I don't know if I should add roasted yams to the vegetable fried rice, or not. Would that be too sweet? Someone with Japanese culinary knowledge, please advise.

seven slightly dodgy eggs
some slightly dodgy ham
some slightly dodgy green onions diced
some slightly dodgy remains of a can of chili
some slightly dodgy mac and cheese-ish dish
a stick of buter
red pepper flakes
some adobo
some leftover kernel corn

in the oven for a while, stirring every 11mins or so, then left in at 375 for about 20m

I'm shocked at how not-bad it is
 
A 3.5 pound chuck roast. I almost never buy meat except when it's on special because I am a cheap cunt but this particular roast looked like the most delicious thing I'd ever seen so I bought it at full price.

I did virtually nothing special to it and it turned out as absolutely delicious as it looked. $5.99 a pound? A pure bargain.
 
Rapid-fire vegetarian breakfast enchilidas.

My quick enchilada sauce was leftover tomato passata with s & p, chill powder, oregano, cayenne, garlic powder in a small saucepan. In a separate pan I then sauteed finely-chopped zucchini and mushroom with s & p, ground cumin, and chill flakes. Removed from heat. Scrambled eggs in that pan with ground cumin and s & p. Removed from heat.

Rolled up egg and mushroom/zucchini mixture into some flour tortillas with fresh cilantro. Placed rolls into baking dish that had a thin layer of sauce on the.bottom. Topped.rolls with the rest of the sauce and shredded cheese. Baked for 20 mins. Served with sour cream and chopped green onion. Was so goddamn delicious.

I'm thinking of picking up a couple fresh produce items, so I can make some pork curry today. I could also make some variation on Asian takeout if I really wanted to as well (teriyaki, honey and garlic, ect)
 
A relative had a birthday recently so I went a little overboard making cookies for my family. I made really chewy ginger molasses cookies packed with spices. Russian tea cakes with ground walnuts. Ans lastly, lemon rosemary shortbread cookies. I really loved the latter. I was going to make a light lemon glaze for them but ran out of time. I will definitely try lavender lemon shortbread next time.

I also made chicken alfredo fettucine off the cuff because I happened to have all the ingredients. Lovely comfort food.
 
I made a "sort of" jambalaya the other day, just by throwing some leftover peas, chopped onion, chopped baby carrots, and bits of cut-up Spam from a can I had opened the other day into a pot with oil, then after the Spam began to get brown, added uncooked rice and water. Turned out pretty decently, even though I didn't add salt until it was too late, plus I forgot to add the leftover beans.

Next time I play around with leftovers like that, I'll probably get more experimental, and not forget the spices.
 
Sweet potato Spanish tortilla. It takes a while but uses 3 ingredients and is not difficult. (Sweet) potato, eggs and onion.

Lots of olive oil (shallow fry), hot pan, cook sliced onion from cold. When oil is sizzling, add peeled and sliced potato. Stir occasionally until browning on edges of onion and potato. Crack eggs (depends on how much you make, I used 4 for half of a huge sweet potato and 1 onion) into a bowl and drain hot potato and onions and put with the eggs. Crack salt/pepper, roughly mix with fork then leave for 30 mins (do clean up in mean time), mixture becomes very thick. Add into lightly oiled nonstick pan at medium heat. Cook on one side for about 3 mins, then flip using a plate and do the same on the other. Serve and eat. The onions make the dish "sweet" and the sweet potato only reinforces it. Centre is the best part as is softer.
