What have you recently eaten?

Goiabada with blue cheese on top. This will absolutely destroy my stomach in the next hours but i like it too much to avoid eating it

Bush's zero-sugar-added baked beans with Mexican blend shredded cheese, cooked in the microwave to melt and then topped with salt and pepper.
 
a quick fried catfish fillet and some pesto rotini for dinner
is very good despite not looking like much i promise

Strawberry cream pie with a pretzel crust from Whole Foods, brought home by a family member that works there. I think it's a brand-new item, kinda pricy but for a special occasion this would be lovely. It's very decadant, about 87 pounds of whipped cream, the crust is suprisingly still crunchy despite the many layers of goo, foo, and cream.

I’m making some Khatchapori with Shakshuka tonight

Edit: Recently on Ash Wednesday I made Pasta Arrabbiata it’s honest so fucking easy it’s crazy

>4 finely diced garlic cloves
>Oil
>Crushed red peppers
>a can of whole tomatoes/4 peeled ripped tomatoes

In a pot throw in the oil, garlic and crushed red peppers and cook on medium heat for 1-2 minutes, throw in the tomatoes, crush them and let it simmer for ten minutes occasionally stirring and then serve it with pasta

You'd do this kind of like cheesecake with a graham cracker crust. Start out by separately baking the crust. And then you never let the gelatin fruit goo touch the crust. The whipped cream/cream cheese/whatever topping isn't going to mess up the crust, which will remain crunchy.

You could probably easily make something like this at home but unless you're skilled with those cake tools, I know I couldn't do the impressive swirly stuff.
 
i made beef nachos from scratch but not ballpark style nachos
they're delicious and give a big queso blanco vibe

-tortillas/chips
-canola oil (if you're making your own chips)
- ground beef
- this mexican bbq seasoning; if you don't have this, use taco seasoning or make your own blend with some cumin + chili powder to start with
- roughly chopped onion and serrano
- a lil garlic salt and a lil fajita seasoning
- chihuahua cheese (other cheeses that work fine for this: colby, cheddar, most melty cheeses etc.)

Step 1. optional: season your ground beef ahead of time and let it sit seasoned for 40 minutes total minimum
(if you do this, be lighter when you season)

Step 2. if you're going to make the chips from scratch: cut white corn tortillas in quarters/fourths
(you can use yellow corn as well as flour too but flour doesnt yield the best results for this)

Step 3. shallow fry them all on low-med heat (enough to get an easy consistent fry without singing the chips)
flip them often until they are a nice golden toasty color
(protip: set them on paper towels to wick up the excess grease)

Step 4. in a clean pan, brown your beef some on the same heat or slightly higher, adding the veggies during the stage when it's entirely browned on the exterior, raw on the interior
cover and let it cook completely, stirring occasionally. your veggies should be thoroughly tender but firm enough to keep their shape.

Step 5. turn the heat off and drain your beef thoroughly if you plan on immediately serving.
if you plan on leftovers, leave some of the grease with it so it doesn't totally dry out

Step 6. melt the cheese on the chips. you can use the microwave (this is what i did and i am not ashamed)
you can use a toaster/mini oven. you can use a big oven. you probably don't want to use an airfryer because it'll probably blow everything around and create a huge mess

Step 7. put your ground beef on top. dig in. it's delish and filling
