Why do Mexicans have a word for apple and a word for sauce but no word for applesauce?

No, in spanish that would be "compota de manzana" or "puré de manzana".

I don't know which one would specifically a mexican person use.

All images were found online using image search for salsa de manzana. I even took screenshots for some of the pages to show the context in which the image was being used. There is probably more than one way of saying it, but it is an accurate translation to say salsa de manzana. The person telling you otherwise I think is fucking with you.

That looks like apple sauce to me and this Spanish speaker is calling it salsa de manzana.

"with sauce of apple". Again it looks exactly like English apple sauce.

Here it's very faint, but it says "Piruleta de morcilla con manzana y salsa de Mostaza". This must be some other sort of sweet sauce.

It's not that complicated, you can use any of the terms mentioned here, but I think you'd normally use the 2 I mentioned, because "salsa" usually to anyone speaking spanish will associate it with a more "liquid" substance.

But OP is talking about applesauce, which to my understanding is not that liquid, and resembles more something like cream or puree.

If that's the case, as mentioned "compota de manzana" or "puré de manzana" are the most appropriate terms.
