Thank you that does sound good. I'll have to go no onion because onions give me fire-breathing indigestion, but otherwise That seems like it would break up the monotony.
Not sure how low sodium this is but I make it a lot and it is low carb/calorie; Kimchi fried cauliflower rice. I take some bacon fry it for a bit, than an egg and fry some more, add some chopped up mushrooms, add some garlic and ginger and then add the kimchi and cook a bit more. Then add the cauliflower rice and cook a bit longer. I will add some juice and a bit of soy sauce if you like and season with pepper. You can then add a fried egg on top and green onions but you hate onions so skip it.
