What Have You Cooked Recently?

Thank you that does sound good. I'll have to go no onion because onions give me fire-breathing indigestion, but otherwise That seems like it would break up the monotony.

Not sure how low sodium this is but I make it a lot and it is low carb/calorie; Kimchi fried cauliflower rice. I take some bacon fry it for a bit, than an egg and fry some more, add some chopped up mushrooms, add some garlic and ginger and then add the kimchi and cook a bit more. Then add the cauliflower rice and cook a bit longer. I will add some juice and a bit of soy sauce if you like and season with pepper. You can then add a fried egg on top and green onions but you hate onions so skip it.
 
Tonight I had a keto version of an English fry up (well somewhat). I made scrambled eggs (two eggs, bit of milk, salt, peper and gochugaru), pan fried mushrooms, two slices of back bacon and half an avacado. Sorry no beans or the fried tomato that no one seems to eat but leaves on the plate.
 
Never made homemade biscuits and gravy before. Mission accomplished.

I made some beef chili in my slow cooker Sunday,
I basically just took a basic recipe I got online, but put in half a bar of Hershey's chocolate and half of tall can of Stone's Arrogant Bastard Ale. Then a couple days later I reheated the leftover chili, and used some of the beef I still had left to make a chili-cheese burger. I honestly think chili tastes better after being reheated because it brings out more of the flavor.
 
tried making the pimento cheeseburgers with roasted squash blue apron sent me (really gotta use those meal kits more before they either spoil or the next box arrives) but really I was a bit of a recipe pirate (if i may borrow a term from the western animated show chowder) and roasted the squash while mixing the ground beef, shallots, seasoning packet, chipotle sauce all together and cooking it till i had something...not bad but really a lot closer to sloppy joes than pimento cheeseburgers.

still was pretty good though despite that, just needed some Manwich sauce or even some ketchup to be decent.
 
Made braised pork belly in a slow cooker. First I cooked them whole for an hour (probably should have cooked it for longer but I was too lazy). Then I fished the pork out, rinsed it, and sliced it into thin pieces. The I marinated the whole thing in a mix of dark soy sauce, cooking wine, sugar, ginger, and scallions for half an hour before tossing the whole thing marinade and all into the slow cooker again, adding some water, and cooking the whole thing on high heat with the lid off until the water evaporated and I was left with a thick sauce.

If I ever make it again I would try cooking it for longer so it melts in the mouth. As it stands they were a bit chewy.
 
Decided to be a deathfat yesterday since its starting to get cold where I am and made smash burgers with cheese, bbq sauce, pseudo tartar sauce/mayo with capers, and then follow it up with some freshly baked brownies. I can console myself that instead of going out and being a pig, I made it myself.
 
Taco slop as I call it. I was originally making them for soft tacos, but the tortillas went crumbly, meaning they probably went bad a while back. So I just kind of made it as a loose pile of meat, cheese, and so on.

Tasted good, but definitely overseasoned. Probably used 5 servings worth of homemade seasoning for 3 servings worth of food.
 
Anyone have any good and cheap, low sodium, low carb, low fat recipes that won't make me want to eat a bullet? So far the only really tolerable meal I can make is turkey burgers or grilled fish.

I have discovered that to keep the patties juicy I can shred up some cucumber, press out the moisture and mix it with a tiny bit of mayo, salt, pepper, and minced garlic.

I incorporate that mix with the turkey meat while making the patties and the cucumber bits absorb the turkey juice as it cooks so the patty stays moist.
If you like tomatoes and eggs you might like Shashuka, it's spiced tomatoes with peppers and eggs cooked on top, goes great with feta or goat cheese.
 
I made spaghetti with shit I had on hand, including Esti vegan meatballs and some tomatoes I made a rough sauce of in the pan. Everything but the meatballs were good. I think they were made of Seitan which is not the best tasting meat substitute. I typically opt for Beyond Meat.
 
Not-fried fried rice. 2 cups water/2 cups jasmine rice/2 cups frozen mixed vegetables in to a Technology Connections approved rice cooker. After it's done mix in soy sauce, green onion, black pepper, and 2 eggs. Should've scrambled the eggs beforehand instead of just cracking 2 eggs into it but it still came out pretty well.

I love making stuff like this & I've found that a digital pressure cooker changes the game.
Makes it a lot easier to get the type of texture where the meat has been cooking for 4+ hours, when the proteins start to break down, but only takes about 30 mins. highly recommended.
 
I made a thick-cut pepper steak for the first time. Pan seared, then cooked in the oven until medium rare. Over did it a bit, but still happy with how it turned out. Probably won't cook it again for a while though, since it's a lot of meat for just one person.
