It actually says "Sclafani" instead of "Scalfani." It's probably still a mutation of the same name, maybe an Ellis Island misspelling.

Close enough, I have noticed that Jack really likes food and things that have Jack in their name almost like a child who thinks it makes him special. If he found an easy way to get those tomatoes he would use them almost all the time every time a recipe calls for canned tomatoes.
