Some of these can be altered, and all of them come in different flavors naturally.

A person's sex is defined by whether their reproductive system develops towards producing large gametes (female) or small gametes (male). There are no in-between gametes.

Yeah we were just talking about different things; "true hermaphroditism" is really a misnomer and ovotesticular disorder is a clearer description. Ultimately, people with this DSD don't develop functional copies of both reproductive systems.

There are hermaphrodites among other species — the clownfish, a sequential hermaphrodite (males can turn into females), is a perennial favourite among trans activists. Things like earthworms are simultaneous hermaphrodites. As you say, this is meaningless for understanding human biology.
