It comes down to people wanting to feel like they're creating something novel rather than just itterating on someone else's work.
Early on this was easy when 'jaks and variants were few, if you had an idea for a 'jak edit there was a good chance you'd be the first. Now, if you have an idea for a 'jak edit theres a good chance its been done before, so people turn to making increasingly avant garde edits.

Probably only so far you can take bald and bearded men before it becomes stale.
It was easier on somewhere like 4chud, as you could find something that people were actually discussing and drop a 'jak and quote into the thread or on the 'log.
I like Impish Mutt, probably one of the better recent trends, even if it's somewhat NAS.
