I used to work for a company that occasionally shipped to Chinese retail customers. They were uniformly awful to deal with, rude, ignorant and would never be straight with you even when we were trying to help.

Then we had our first dealing with a Taiwanese company, when we fucked up massively on an order, they went out of their way to help us. Polite, personable, one woman I was talking to took the time to google the town we were based in so she could bring it up in conversation. They were the most ethical, professional and just downright nicest customers I ever encountered.

The recent influx of people from Hong Kong to the UK has been something similar, incredibly hard workers, with a very strong family connection. Although they tend to be a bit more stand offish with locals and prefer to keep themselves to themselves.
The tragic irony about China and Taiwan is that while many younger citizens have understandably distanced themselves from the "Chinese" label because of the CCP's aggression and the appalling reputation of the country and its citizens, Taiwan has done a far better job of preserving traditional Chinese culture involving religion, etiquette, and literature than Mainland China ever has. Taiwan is far more culturally Chinese than Mainland China will ever be even though it was never historically a part of China. The CCP didn't just destroy so much of Chinese culture, they destroyed the morale of the Chinese people that traditional Chinese culture encouraged as well.

The chinese always had a culture of doing literally anything to get ahead and the ends justify the means, but the Cultural Revolution stripped the institutional politeness and legacy honor-codes they had. Whereas before they'd stab you in the back and feign they knew nothing of it, now they stab you in the front and feign they know nothing of it.

These look great. My mom loves them, but she usually only eats them boiled. I am looking for more interesting ways to cook them for her. The first two recipes look amazing. If you have any recommendation please share, thank you.
I've only ever had them as a novelty when a fit of whimsy has caught me, precisely because you can't buy them in shops. The extent of my foraging usually comes down to blackberries and sloe berries (for sloe gin).
I'd advise that as long as you're doing something to tackle the bitterness you can basically use them like any salad greens. Boiling them is the most surefire way but getting something fatty on them also works (probably still best to blanche them first). I've never tried it but you might have some luck with doing them like creamed spinach.
If you're able to dig out their taproots, you can roast them to make a sort of erstatz coffee/tea like with chicory (it was popular during the war) but again it's probably something to do as a hobby.

I don't really forage them so I haven't had an opportunity to try the tea with the roots (I have also seen people make a syrup from the flowers). They are available in many stores where I am though, so finding them is a non-issue as well as the bitterness I often chew on them raw as I prepare them. How I usually serve them is boiled with olive oil and lemon juice with steamed potato, green beans and some meat. Salads would not be a good option because my mom prefers the texture to be a little soft because the fibers of the stems can get very tough like celery (even blanching can not be enough to soften them sometimes). The creamed spinach idea is not bad, I could even keep a batch in the freezer for a quick side dish. That Korean recipe you posted is what really caught my eye, she loves Korean/Japanese food (cucumber sunomono is her favorite Japanese dish) so I have been trying to learn more Asian recipes over the last couple years since I am only familiar cooking Italian/Greek food. Again just wanted to say thank you very much for the recipe, I am very sure she will love that one.

Jesus, DSPs cooking is something else. Adding x amount of shakes/grinds of spices instead of tasting the food and adding more as needed, that's fine I guess, he has probably made the dish enough times to get a sense on how much he needs to add. Using tomato sauce instead of whole tomatoes, yeah this is starting to get bad. Dumping in 1/4 a cup of sugar, ewww. Not using fresh onion and garlic is also iffy.

This lady mostly does light-hearted roasts of shitty TikTok cooks, but her fanbase does have that seasoning police aspect to it. I don't understand why so many black people think you need to use five different spice blends. Like the chef from a video in the OP said, salt is literally what gives most of these mixes their flavor and you can get the same result from fresh herbs/onions/garlic/peppers... Also did I get it wrong or did she say black pepper isn't a form of seasoning? (LOL)

Just today I got a YT short of some chicken recipe. Of course, she washes her chicken in water and scrubs it with a lime wedge for some reason (Google search results show only black people doing this). The seasonings are things like pickled vinegar, garlic paste, seasoned salt, greek seasoning, onion powder, garlic powder... Then it's smothered in some gravy made with roux, liquid chicken broth and a fucking can of chicken soup. It doesn't look bad, but I don't get this obsession with fifteen different sources of sodium and MSG. You could probably replace one or more of these seasoning mixes with any other and the resulting taste would be the same. How are they gonna shit on wypipo for salt and pepper when 90% of their flavor profile is sodium?

Also, I don't know if it's been mentioned, but black people have like 2x the chance of developing diabetes compared to white devils. Could this have anything to do with cornstarch?
