You're approaching this hypothetical like it's 1940, it isn't. Let's just assume that China invade Taiwan. China can have a flotilla, armed and on the shores of Taiwan before the west or America have prepped to leave port, not including the time it takes to sail over there. By that time China are entrenched and sitting pretty on the island. An island full of civvies, and as much as Americans enjoying nuking civvies in south asia, it won't go down well this time.
On top of that, using a nuke against an island that you need to keep intact, isn't a good play. This would be the strategic equivalent of thrown a nail-bomb inside your own greenhouse.
Lets look at the real issues though because, physical fighting aside, America couldn't last ten years without the chinks and I doubt it would last 10 months or 10 weeks.
First, consider that Microsoft, Tesla and Apple; the three largest companies in the world and ones that the stock market has a lot of money invested into, would no longer be able to sell physical products;carsm iphones, consoles/servers, because China has cut off the supply of electronics. Throw Amazon into the mix, which relies on chinesium to power their company, as they deliver cheap chink tchotchky's to every SME in the west.
Now, within a day or two, the stock market has crashed, the financial institutions are in tatters. It isn't long before banks fold, money becomes almost worthless and civil unrest follows. We saw with BLM, the summer of love and George floyd that a group of people love a good riot. This time, your police force isn't there to keep the riot going, they're actively stretched thin as possible stopping riots all over the county, state and nation, ignoring the real violent crimes that are kicking off. Race murders, gang killings and all out unrest kicks in within a month.
What good are the boys on the south china sea doing while your country burns from within?
You could say, "well, the chinks won't do it because they import food and they would starve." Well, not quiet. America is the largest exporter of corn, the rest comes from India, Russia and China, three Brics countries. You've slammed Russia with sanctions so they'll happily supply China, as one of the worlds largest exporters of food, over sending it America.
With America tied up with China, Russia can hammer the fuck out of Ukraine, knowing no more support, weapons or money is coming for them. Likewise, the mid-east could assault Israel, knowing they are left to fend for themselves for a change.
Europe, tied up between infighting, attempting to prop up their own economies, shifting to internal food production, an insurgent army of muslims rising up and their hysterical panicing of Russia kicking down their eastern front, wouldn't be able to do much to help.
With all that in mind, a reasonable question would be, "If Russia, Mid-east and China all benefit from this, why don't they just invade?", the answer is, imo, two parts; 1) There's no reason to tempt fate by starting a world-wide revolution and hope that their own citizens don't rise up in anger against social-credit tyranny, and 2) because America are sore winners and worse losers. They would, without a doubt, launch every nuclear weapon they have at any target they could, friend or foe, and worst of all, be cheered on for doing so by their own people. America on the world-stage are that friend with the mental girlfriend (MIC), the one who's nice to look at, but you know the second your friend tries to leave her, she will stab him then commit suicide because she believes "If I can't have him, no-one can".
TL;DR - There won't be a war, chief, because war, huh, yeah, what is it good for? Absolutely nothing.

I was actually thinking today about how ‘mutually assured destruction’ is probably bullshit and if there was a nuclear war it would not be as catastrophic as we think it would be.

Even at the height of the nuclear arm build up during the Cold War, the total power of all of the nukes going off at once in one spot didn't come close to a single large volcanic eruption. Nevermind the bigger ones like Mount St. Helena or Mount Pinatubo eruptions.

A war shouldn't happen but it's always a possibility no matter how slight. The fate of the European empires and two World Wars should be enough evidence internationally connected economic interdependence doesn't always guarantee peace. Sometimes the people at the top who have the power to make countries to start, participate in and end conflicts don't care (at least initially) about the financial situation prior to fighting someone.

You truly need to understand that these systemic and institutional problems with the USMIL cannot be handwaved away. Even with completely serious leaders it would take 5-10 years minimum to make serious changes. And our leaders are all fucking clowns. This is why its boomer talk.
We can't produce ships with any speed because the Jones Act 100 years ago turned American shipbuilding into a complete monopoly. One that has no need to build fast and cheap because they are the only game in town. That is just one aspect too. We killed all of our Cold War production capacity of basic munitions, it would be years to rebuild that. If we were serious about it. The draft is political suicide and wont be attempted while also ideologically destroying the idea of Civic Service since the 60s. The America we live in today thinks draft dodgers were the righteous actors. A cultivated unity in Uncle Sam doesn't exist anymore.
It goes on and on. You can't simply say that USA in 2024 is identical to the USA in 1941, its just an unbelievably retarded school of thought.

The school lunch program was justified because for WWII alot of draftess were underweight. So having the state provide nutrition is not exactly a crazy idea.
I moonlight in education and fuck, the money for "school lunch" its a fucking trough thats looted and the kids get total shit. The schools should have real kitchen with staff doing real cooking and serving real food.
My old highschool has a rifle range and the gun club existed up till the mid 1980s. that because you had programs that prepared the youth to serve the war machine.
If we maintained a draft and forced service espically amoung our elected class and their donors, we would not be having the forever wars.
I never served but listening to vets like @Joseph Stalin and @Jet Fuel Johnny it sounds like the military is top heavy with leadership that like to play political games to which they are rather good at.

That's been a running assessment that's been gaining popularity since the 80s. It basically replaces MAD (Mutually Assured Destruction) with NUTS (Nuclear Utilization Target Selection) which states that a nuclear war is more likely to be a limited affair instead of a world ending event. It's still the worst case scenario you could possibly have buy civilization as we know it may or may not survive.
That was all engineered to do so. COVID was never serious enough to warrant the kind of response it gave and was just a pretense used for social engineering experimentation which is what actually damaged the economy. The same can be said for 9/11. That said, a nuclear war would be even worse in terms of the actual damage and the following social and legal chicanery.

Honestly... That's the problem. We are closer now to some kind nuclear confrontation and everyone is oblivious. Our leaders most of all.
The sense im getting from Putin Is that he doesn't want to start any nuke shit, but we are not giving him anything to work with and are constantly seeking to undermine Russia anyway we can. It's to the point of breaking our own rules we set for everyone else and cutting off our noses to spite our face. We don't want peace, we want a weak Russia, a weak Europe and we want to be top fucking money dog of the world. Problem is that's impossible now. We've spent too much resources on the krain and nobody smart wants to fight for this corrupt nation anymore.
America feels like its losing its grip and is trying to pull everyone down with it. The fucking insanity of targeting the early warning nuclear radars of Russia with Ukrainians firing weapons calibrated by US personnel is a joke. Not to mention nord stream and our strong arming of Europe. We are literally doing everything but officially send in troops to save the krain and nothing is working. Instead of accepting this, America doubles down and alienates everyone.
The propaganda machine says it's a good investment, but it's like sinking money into a slot machine expecting to get a fortune back. The Russians have figured out how to win slowly but surely, and any losses they had at the beginning of the conflict are offset by the experience and reorganization gained for their army's in how to properly conduct war operations and counter America's weapons. Their economy has recovered and they are well on their way to self sufficiency. Not to mention forcing Russia to join forces with China.
We don't have serious leadership. We have cheerleaders who pretend putins the next Hitler and don't seriously try to talk to him or even consider him on their level. How else could you repeatedly host peace talk summits without any Russian representation? We shit in his cornflakes repeatedly and call him evil. We can't keep calling him the devil, back him into a corner and expect things to end well.

The EU was proposed as a Economic Union but thanks to russia breaking a taboo about crossing imaginary lines on the ground, That Economic Union idea is failing and the french are ready to lead the way for it to be a "security union"

Humanity would survive but the misery and suffering and hardship would be beyond anything modern Western man understands or is prepared for.
The most critical thing is that none of the great powers present an existential threat to any of the others. Proxy wars in various places around the globe wont trigger it by themselves. But if a great power is visibly and clearly going for the destruction of one of the others, that's when the targeted Great Power can and realistically might go nuclear.
