It's 120 GB because of 4k textures and the high fidelity models to support that and ray tracing and all that shit. There's only so much you can do to "compress" stuff like that without impacting their clarity.
The original game had like 512x512 textures. The remaster probably contains like 4000x4000 textures.
I'm sure they could've done better, AAA dev producers love to cut corners on this shit, but it's not like this was ever gonna be under, generously, like 40GB.

Seriously, depleting returns on graphical improvements was already mentioned, daggerfall to morrowind was amazing, morrowind to oblivion was great, and oblivion to skyrim was....nice, but not that great. Anything past that is purely setting resources on fire because you can imo.

John Carmack years ago (like two decades) said audio in games was at diminishing returns levels of quality and graphics were not far behind. We're just in that now. Massively diminishing returns for more and more data and fidelity.

Is the jump from 40gb to 120gb of textures worth it? Probably not. That's a much broader issue the entire tech sector is struggling with as the wheels come off of the "things are always getting better" train.
