His involvement was somewhat limited for the most part other than enforcing a strict set of rules and having Leland Chee and his story team act on his behalf for most decision making. Although there were projects he would personally be involved with to varying degrees. The only ones I know of are the Shadows of the Empire multimedia project,
adding EU stuff in the 1997 cinematic re-release of the OT (Special Edition) as well as the prequels, some sort of involvement with the Vong and the final fates of the Solo kids (
which has a little bit of drama tied to it) and being the one who
wanted the Emperor to be brought back in the Dark Empire comics, with George being the one who approved the idea that the Emperor should be brought back through cloning. There was also
this bit of drama over a contract. There was also the matter of Ewoks media which George was directly involved in with almost everything, like the movies, the cartoons, some books and comics but were all still classified as EU. Filoni Wars was also technically EU despite George's prominent involvement with it early on since George didn't want to put it in G Canon (which is the Canon rank of the six main films) for some reason, instead he created a new Canon rank for it called T Canon which meant "TV Canon" and was for the new line of TV media he wanted to set up, like Filoni Wars and the cancelled Star Wars Underworld, which put them in a continuity rank all their own. There's also a few more accounts of involvements but I can't remember them. But regardless of involvement, George could still want the rights to the EU for reasons that are only known to him or possibly for the stuff mentioned above. I mean, he still holds some control over the OT and PT, being
the only one who can still authorize whether or not the de-specialized editions can be screened and making sure Disney can't retcon the PT. So it stands to reason he still holds some control over EU stuff too, which includes KOTOR, not to mention "EU" is just a catch-all term for anything that's not the six main films and there's a lot of SW stuff that George might've been involved in that we don't know about.
Notably, he was called on to the set of the new Mandalorian show to see if it met his approval, and according to leaks that show features quite an amount of EU stuff, although some aliens seen thus far come from TLJ. It's all baffling really. Whatever the truth is, there's no doubt there's a lot of juicy drama going on over at Disney-Lucasfilm.
