Again, the only way to actually play those games with DRM now is to have a backed up copy and install a crack. Steam downloads updates automatically, so there is no way to play your game now on that service anymore.
Hopefully this will get people to start weaning off these horrid launchers. Them having a monopoly on how PC games are run these days is also another problem that needs to be addressed
Devils's advocate: All the previous versions of all games still exist on Valve's servers. Valve forces newest updates from the Steam launcher, but with enough finesse you can pull older versions from their servers via SteamCMD. They make it difficult, but not impossible.
Now, do other platforms even offer the ability to download older versions legitimately? From what I'm aware, GOG, which people praise for being a DRM-free alternative to Steam, doesn't offer that. The only way you can get an older version is via piracy. Epic Games Store, the one that loves to call itself a solution to Valve's apparent monopoly, as far as I know doesn't even offer such functionality from their API.
So my question is, what is the alternative? And I'm strictly speaking about legal ones, if you bring up piracy as an alternative this entire argument stops being valid because it's about the quality of a service you pay for. There are none, every form of obtaining games digitally is plagued with this. Your only real legal option is to go for used physical copies if the game is old enough to be released on those, but again, now you're paying for a product, not a service, and you're doing so on a second hand market, and it limits you to older games.
Valve is more likely to add the ability to easily roll back game versions in cases like these, since they don't have the luxury of having a steady income from investors by just existing and virtue signaling. It's also why Valve has this "monopoly", it's because no one else does things better than Valve. Valve can afford not maximizing profits in the name of maximizing customer satisfaction, because they're not legally obligated to keep the green line going up.
I know people love to hate on Valve because they're the biggest so they're the easiest to hate, but if Valve is bad, then who is good?
