I think that, when it comes to remakes, the best are those where the people making it just don't copy the original, but take the original idea and then go from there. In terms of movies, Zack Snyder's Dawn of the Dead remake is a good example, or Brian de Palma's Scarface. I think what bothers me about the LA remake, other than the artstyle, is that it's pretty much just tye same game again, and I can play that pretty well on an emulator. Now, of course, OoT 3D was almost an exact copy of the original, too, but OoT was as close to a perfect game as can be, so they didn't really have to change anything.
Another thing about remakes is that they're best when they fix things that were problems in the original game or film. Thing is, Zelda games have a way of aging really well apart from minor stuff here and there I can't think of a Zelda game that truly needs fixing. At most Zelda I & II, but an fully re-imagined version of Zelda I would probably just be Breath of the Wild again. That leaves us with Zelda II and, yeah, I'd play a version of Zelda II that's closer to OoT onwards in terms of gameplay.
Bottom line: Remaking Zelda games is pretty pointless overall. Just sell me a copy of TWW on my damn Switch.
An addition: Another game that would profit from a remake is TWW, because such a large chunk of the game was missing. However, they already did not do that when they released the remaster, so I'm really not hopeful.
