Is there a good guide on how to prepare asparagus? I've tried cooking it once, a few years ago (it's not really common here), and it had the texture of eating wooden sticks. I tried it again, about a month ago, this time from a restaurant, and it was decent. Did I fuck something up during cooking, pick them up during the wrong season, or what? This one vegetable has managed to escape my gluttony so far.

Probably sous vide + finished on pan

I don't feel comfortable with sous vide, microplastics and all that. Would a boil, then pan, be a reasonable method?
The last time I think I simply tried to roast it in an oven.
There's no microplastics in sous vide though. The bags are made for that purpose, and sous vide temp is not high enough to pose a risk of any material melting on the food

It's different than a regular boil because the thermocirculator's purpose is to mantain a steady temperature for long periods of time. Could work just as good, so long you don't overcook it. Blanch them then finish quickly on the pan
