My question is why Bob likes to simultaneously beat the "my ancestor was on the Mayflower" which would peg him as primarily of English Protestant and probably Congregationalist descent while also claiming to have gone to Catholic school.

It's not impossible but conversion from Protestant to Catholic is in my experience not an exceptionally common event and probably even less so multiple generations back.
