Cock.li used to be perfect for what you are describing but you currently need an invite code (I used to generate a shitton of e-mails addresses on it before though, feel free to PM me if you want an invite). If the email doesn't need to be quite as 'unique', I think that trick where you put '+somebullshit' between the main user part of your gmail account and the @gmail.com part still works for making it easier to block crap from particular websites.
I currently am doing this with a domain which is working out well. The prospect of this was spreading out the 100+ sites I've signed up for over the bugger off amount of years. With my current website hosting domain they only limit me to have a maximum of 5 emails which I think is fucking stupid. Could be a future option though if I ever upgrade my plan.https://burner.kiwi/
