In the books they established that the breen are a confederacy of races that all teamed up and wear the same mask to promote unity, which explains why they are so mysterious and weird.

Officially though there's no hard canon for what they look like. Though there's one piece of lore that says they would dissolve in an atmosphere without their masks. I file that under speculation though.

It's like how Stargate made a joke about Futurama But then again, Futurama made a similar Freaky Friday-esque episode that Stargate did where characters switch bodies.

The Nyota Uhura TOS thing is like when someone turns trans, and a "righteous" wiki editor changes all their pronouns. Nyota belongs in b-canon and Kelvinverse/STDverse only.

There is a need for a version of Memory Alpha that discludes the reboots. In print, there was semi-recently a 3.0 update to the Okuda's Star Trek Encyclopedia, but it integrated the JJ movies so I skipped it.
