I know they tried to hide it on the show but part of me wishes we had an episode looking at Scotty's past and they reveal he served in some Federation conflict and that's how he lost his fingers.Scotty also stormed the beaches of Normandy and was lucky enough to get away with a couple of severed fingers, so he can be over 600 pounds for all I care.
There were plenty of opportunities to remove Doohan's/Scotty's right middle finger in-universe (my headcanon would be a finger destruction by Apollo in 'Who Mourns for Adonais?' It really boggles the mind how she managed to triple in size, presumably eating the exact same regulation food as the rest of the crew. Unless she was eating like three times more of it than anybody else, which is not a quality I would want in a starfleet officer.

That implies they actually have stores of perfectly normal fresh food in TOS, and the machine just crushes it all into colourful cubes (sometimes jello) before they eat it.

1. Realistically, the average Starfleet Officer has access to far more dangerous stuff than potentially combustible alcohol. They give phasers out like candy for one thing, and each one of those has a built in self destruct mode standard.Regarding Sythehol I headcanon numerous reasons why it is a thing
1) Alcohol is combustable ergo letting jilted starship crew create infinite amounts of explosive material probably isn't the best.
2) The horrors of space can drive even the toughest of people to drink, probably for the best that they can't create real alcohol. Imagine an addict with access to replicator that could create infinite booze, they would be dead in days.
3) If everyone could just create real alcohol, There would be no reason for Quarks or 10 forward to exist.
Given Dax's behavior, it's reasonable to assume that Starfleet officers get some kind of per diem- the Federation may not believe in money, but Bajor, Cardassia, and Ferenginar sure as shit do.(Not gonna lie, I don't really understand how Quark's business works when most of his would-be paying customers don't believe in the concept of money.)
