To be fair, I don't think it's ever explicitly said that Jem Hadar *can't* sexually reproduce, just that there are no females... Which you're right, doesn't mean the Jem'Hadar CAN'T have sex... it's just retarded to establish them as literal golems only to renege on it and make them actual people.

I mentioned this a few months ago when the character was first revealed, but you could argue that Jem'Hadar biology has changed in the centuries since the end of the Dominion War so they don't have shorter lifespans or a dependence on ketracel-white. What I don't get is what this means for the Jem'Hadar politically. Did the teacher's Jem'Hadar parent defect to the Federation? Did the Jem'Hadar join the Federation? If so, was it pre- or post-Burn? Is the Dominion still around, or did it collapse after the Burn?

It is kind of a tradition to introduce into the main cast someone from an antagonistic race/faction. TNG had a Kingon, DN9 had a Ferengi and a Cardassian, Voyager had Maquis, then a Borg when they needed something to boost ratings. But these were presented as exceptions to the rule or necessity to dire circumstances, not subversions. Worf joined Starfleet because he was having an identity crisis being the only Klingon he ever knew after being adopted by humans, Nog joined Starfleet because he was ashamed of his father wasting his potential and didn't want to end up the same, The Maquis rejoined Starfleet because they were all stranded in uncharted territory and needed to cooperate for survival. What all these characters have in common is "I have failed to live up to the standards of my people, Starfleet is a means to find purpose to make up for it". They weren't rebelling against what they are, they're compensating. New Trek has these odd ducks joining Starfleet as open rejection of what they are.
