Why should monsters not be able to bleed?
If you ignore Undertale, in DR's Chapter 1 Epilogue, you can talk to an NPC who says "What it feels like being made of blood?" asking to the only human in town (You), so it implies that only humans bleed, or at least, a majority of monsters don't bleed.

If you don't ignore Undertale, monsters are made of dust rather than blood, with the "confirmed" exception being sans,
 
If they were just made of dust then we probably wouldn't have Rudy in the hospital and things like that.

iirc the lore says they're "made of magic". Seems like while they're alive they function like any other organic lifeform, but when they die the buck stops there. "Falling Down" seems like their bodies first stage of shutting down, just some kind of early coma before everything actually goes.

New observation: Ralsei doesn't have a textbox sprite when he's covering his eyes, immediately after he lifts his hands he has a sprite again. Source: 1 2

Lore significant?
Closing your eyes does actually have significance when related to Kris as he seems to gain back some amount of control when his eyes are closed (control which can be transferred as shown during the various "close your eyes and think of Susie" segments, though Kris seems to maintain the control whether we leave or not, as shown with the tea party apple scene.)
If it has any significance to Ralsei specifically I don't know, but eyes are a very very prevalent theme throughout the game so it wouldn't surprise me.
 
I've wondered about the significance of Ralsei's portrait having colours since chapter 1 myself. Probably a darkner thing, since Lancer's portrait is also in colour.
I think that one's just a darkner thing. Susie, Noelle, and Berdly don't have colors, even in the dark world. If someone broke from the pattern, that'd be interesting.

And now that I think of it, the fact that the Knight is always black and white could be used to hide where they're from, if they ever talk.

All three of them reveal their eyes in chapter 1 actually, Susie's hair blocks her eyes until late in chapter 1 and Ralsei's are partially obscured by his weird magic hat. Add that to the fact that there's weird eye symbols all over the place in the first area that seem to be related to the Titans, and the fact that Ralsei's eyes become even more detailed without his glasses for some reason. I'm sure there's more examples of eyes being important but that's just off the top of my head
 
I don't frequent theory discussions enough to know if this has been brought up before but I was reading through Noelle's blogposts about Cat Petterz again and this possible origin story about mods spawning a glitched egg into the game reminded me of something from Pokemon.
Basically, the games have this kind of failsave against wrongly executed cheat codes from players, where the game will spawn a "Bad Egg" into the game as a replacement to prevent damage to the save file.
Unlike any other egg, the bad egg will never hatch and it cannot battle either. And since its also still treated as an egg you can't release it, so it just exists on the file now, wasting a slot.
Or maybe you just have to treat it nicely until it too leaves due to happiness?

i think there's a strong chance suselle doesn't work out. Noelle definitely has the oneitis for Susie it feels like she's more interested in the parasocial idea of Susie that isnt anything like she actually is. Sure Susie has kind of steered her towards understanding her, but only to the extent that Susie is able to reciprocate positive feelings and isn't the bad kid everyone thinks. It even feel like Noelle kind of even fetishizes Susie's abrasive mean girl act in a way more than the actual susie we see more of in our adventures

Noelle thinks the festival is going to be a big romantic thing for her and Susie, but Kris is tagging along, and Susie clearly sees this more like a hangout with friends. There's your "fire of jealousy" in chapter 5
