So if there's only one ending to this thing, then is the stuff Ralsei is telling you about not being violent or something bad may happen just teasing us all? How is Mr Fox going to play with our minds and hearts this time around?

Most likely theory is that the part where you are a hero of underworld (alongside the character customization) is just Kris dream. Thus the "Your choice don't matter".

Apparently it only affect how you beat the king, if you just plain slaughter everyone apparently he would just be sitting in his throne and not even bother to fight you, if you go full pacifist the people that you actually helped (aka not killed) would just dethrone him and put Lancer as king, that is what people has told me, not going to bother with another playthrought just to go full edgelord

How do you slaughter everyone? When I kill enemies they just run away and I don't get any EXP. I did a run where I killed everyone I met and all of them just ran away and the ending was "lol they're rioting".

I'll just wait for the full Deltarune game to come out. I played the Chapter 1 demo and I thought it was interesting to see where Toby goes from here.

I think it's gonna have more gutpunches. The demo is already in a much darker tone than the original (Although UT's demo had that too because it was before the tonal shift in development)
There are several really depressing moments.
I think the worst was when I saw gerson's grave and realized the book series he was writing that was frequently mentioned was left unfinished.
The eviction notice on Asgore's shop and his living state was pretty sad.
Jevil and everything related to him in general (Including his battle music) is strange and melancholic. The same for seam too.

These are the fews i encountered
The great difference between Asriel room and Kris, his has shitload of trophies and things, Kris room is barren and looks like something out of Fallout
The fact that people remember more fondly your brother than Kris, people remember Kris as "some kid" that liked to pull pranks
The Asgore situation like you mentioned, it gets more weird when you notice that the flowers look like Flowey and are arranged as the SOULS he stole in Undertale to breach the barrier, no one knows for what reason he refuses to sell the flowers
If you actually meet Asgore he gives you flowers for Toriel but when you deliver it to her she is almost annoyed and angry at the fact that he send it, to the point that she even refuse to say his name (she says "HIM")
If you go to the hospital you can meet the father of one of your classmate (forgot his and her name) apparently he is very sick and dont want to tell his daughter about it, he is always very cheerful and tell her to bring her console so they could play games, when she leaves he asked you to be her friend implying that he is not going to make it

Dont know exactly because i never personally tried, as far as i know the ending doesnt change, the only thing that change is how you dispatch the king at least that is what people have told me
Edit while i was typing: according to my friend in IRC the thing that changes is that if you did not use ACT to pacify people, one of your party members use a Pacify spell to put him to sleep, if you were a pacifist like i did, Lancer appear with soldiers and stage a coup to dethrone him

Probably late to the party on this but my theory is that Deltarune is a completely different timeline and not a true sequel to undertale. Probably a timeline where either the monsters weren't forced underground or possibly one where Chara doesn't kill himself and they somehow make it out the underground
I look forward to what Toby has in store for us when the full thing hopefully comes out

Toby pretty much confirmed in his post that it's kind of a Majora's Mask alternate universe story. Familiar faces, but not the same characters you know.
I'm pretty amused at the fact that holding a piece of chalk like a cigarette seems to be Susie's "thing" in a bunch of the fanart I've come across.
