What Have You Cooked Recently?

You might be able to choke them down with enough butter and syrup! I considered giving the rest of the bag to a gluten-intolerant friend but changed my mind because I didn't want to subject him to that.
I'm trying avoid eating like a fat person nowadays, thank you very much. I usually eat pancakes plain when I make them. The olive oil and milk in the batter does plenty to flavor actual pancakes. Ah well, I should be cooking from scratch anyway.
 
I made the most utterly dogshit pancakes ever yesterday. Normally I always make my pancakes from scratch but my mom picked up a few cheap packages of mix that were on a last chance sale, to try for fun. One of them was keto and has erythritol so I was pretty concerned, because that's the "destroy your asshole" sugar substitute.

I was even more concerned when I started mixing and it smelled like dry cat food.

Cooked up decently well, I'm not good at making pancakes without making them look like shit so that's no fault of the mix, lol. But the end result was the texture of sand with the flavor of cardboard. Not a lot of sweetness and hardly any chocolate flavor.

To flavor my pancakes or waffles I use a little allspice, ginger and cardamom. Prerequisite dash of salt and sugar too.

I cooked a Mexican-American chicken and corn tortilla soup using tomato juice instead of canned tomatoes because I'm too lazy and drunk to drive to the store for canned ones. Turned out amazing and I used broken up tostadas to thicken it. Turned out amazing and is dead simple, my go to for when I have old tortillas and chicken I need to clear outta the freezer. Making a steak later in the day, just standard salt, pepper and butter baste.
 
I'm trying to do healthy eating with animal products, so I made liver and onions today with bacon. I have had liver sausage before and did not like it, and was apprehensive about eating this. Well, it was surprisingly good! I think they key was that I soaked the liver in milk for about 2 hours before cooking it, and I also cooked the bacon first and then the liver in the bacon grease left in the cast iron pan. The milk soaking supposedly gets some of the gamey flavor that liver has out. Very pleased because I was worried that I wasn't going to be able to force myself to eat the stuff. Also had some riced cauliflower on the side but who gives a shit about that.
 
I saw I had some duck bones in the freezer and decided to turn it into broth. I ended up removing the bones afterwards and turning it into a Chinese chicken soup. Added chicken, spices, and vegetables to it. Turned out great.

Side note: I bought some szechwan pepper and realized that it was fresher and maybe higher quality than the batch I used up. I realized two things, one being that it's a numbing spice. Two, that the numbing effect is probably how they can tolerate eating gutter oil and landfill meat. :c
 
We made two batches of polvorones; First batch had good texture, but she added lemon zest into the batter, then cinnamon sugar on top, for a strong flavor. It was thrown away. Mom hates the second batch because "it's too Mexican" the main ingredient is Maseca.
For lunch, less than a pound of frozen seafood paella.

Got some chilli simmering right now. Been cold for spring the past couple of days so I started jonesing for something warm and hearty. I just eyeballed a couple of basic chilli recipes to refresh my memory, but I did add a bunch of mushrooms and threw in some almost burnt bacon. I got some macaroni noodles, so I might boil those up and make it chilli mac.
 
I made chili too, last night. i've been eating it all day. it was pretty simple with beef, sausage, a bunch of different beans, an onion, and a lot of jalapenos. mushrooms sounds really good. I just got an instant pot, a pressure cooker thing. im still kinda worried i might fuck something up with it and make it explode lol fingers crossed.
 
Plain old chocolate chip cookies, because I had a bag of chocolate chips that'd been sitting on a shelf for a while and I didn't have any plans to use it in the near future. Then in the process of getting the ingredients together I found an even older bag of chocolate chips, so I used that instead. I'm not saying that they turned out great, but they're definitely not terrible. About 2/3rds of the batch I scooped onto a parchment sheet and stuck it in the freezer until they were solid enough to transfer to a ziplock bag, because I didn't want to bake them all at once and they're better when they're still warm out of the oven anyway.
 
Mac and cheese. a fast stove top version

  1. Boil and salt water, cook macaroni for 2-3 minutes less than the package until it's slightly firmer than you want
  2. Save a mugful of the pasta water and drain the pasta
  3. Add butter to the same pot over low heat, let it melt then add flour and a little each of paprika, garlic/onion powder, mustard powder, and black or white pepper
  4. Stir the roux for a few seconds until it combines then add milk, parcooked macaroni, a splash of pasta water, a bunch of grated cheese (preferably grated yourself), and a few dashes of worcestershire
  5. Keep stirring for a few minutes, add a bit more pasta water or milk as the macaroni absorb the liquid, also adjust any seasonings as needed. Adding more cheese is never a bad idea either
  6. Serve it when the pasta gets to your preferred texture and the sauce is nice and thick.
 
More air fryer adventures today. This time I roasted some zucchini to have with lunch which tastes just fresh out of the grill and I also tried roasting sweet potatoes which taste awesome.

I also need more seasonings garlic and onion powder, I ran out, I want to try brussels sprouts and cauliflower next. Then again, I do have some balsamic vinegar in the cupboard I could use too, I think I found some recipes where you can use that for brussels sprouts
 
I got a hookup for fresh eggs. Been making frittatas sans cheese lately and it's been great.
My favorite was one with egg (duh), grape tomatoes, portabella mushroom, morning star (fag) sausage, whole garlic cloves, cherry peppers and caramelized sweet onion. dump it in the cast iron with some paprika, salt, peppers and pop it in the oven. Sweet potatoes are also great in these if you like them.
