What Have You Cooked Recently?

Starting with fried potatoes, these don't have to be blanched to enjoy them in small chunks.
These can be topped with liquid cheese, sour cream and chive to be like taco bell's cheesy fiesta potatoes:

What do you season them with? And they're coated in flour, or is that starch?

I seasoned the ones in the picture with a store-bought hamburger spice, but nearly any spice mix will work.
disclaimer: the hamburger spice is probably not exactly what the potatoes from taco bell taste like, but it's still pretty good

1. Chop the potato into small chunks
2. Put the spices on and roll them around in a bowl with the spices until it looks even
3. Add corn starch and roll them around again till they're coated like the picture
4. You can fry them immediately, or store them in the freezer. I fry at around 380 for a few minutes, or until they seem done.

You will need:
- Corn starch
- 1 or 2 potatoes chopped into chunks
- Hamburger/chicken spice, or one of your own spice mixes
- Neutral-ish oil for frying like canola, crisco or even refined coconut

Some potato fritters I fried up yesterday. Making a potato-based dish on an Irish holiday was purely a coincidence, I swear:

That does it, I'm gonna have to make some goddamn fried potatoes.
I would too but I won't as this would be my third serving this week, I bought some artisan ketchup and it's great with some golden brown fries and honey mustard, but I have my limits lol!

And on to the topic, I made myself a sauteed mushroom and blue cheese and parmesan omelette. The mushrooms were fine, the cheese was a bit bland (not me who bought it, so it was a gamble) but the omelette itself was okay, better off making some cream of mushroom soup lol!

I like the looks of those. They remind me of aranitas, "little spiders," which are also fritters made from grated green plantains. There's also a really similar item done with ground yuca.
 
Anyone have recommendations on good rice cookers? A lot of youtube cooks seem to swear by zojurushi.

I got some recently just having seen it be talked about and have put it on a few things. The one unqualified success was basically just adding a bit of it to chicken breading and frying it.

It is bold but not particularly spicy, although its strong predominant lime flavor still means you don't want to use it to excess.

It's clashed with anything else I've tried, although I bet this would make a fine addition to a fish fry.

Also anyone have an opinion on that Kewpie meme mayonnaise /ck/ loves so much?
More drinking than cooking, but it’s great in palomas and margeritas.

Made a basic noodle stir fry out of random shit in my fridge.
-Celery
-Bell pepper
-Chicken hearts
-Carrots
-Onions
-Garlic
-Soy sauce
-Fish sauce
-Oyster sauce
-Bean thread noodles
Seriously cannot recommend bean threads enough, they're piss easy to cook, super cheap, soak up any sauce, and generally have an amazing texture.
 
I tried to mkae my own homemade Nutella. Looks like fucking diarrhea, but is pretty yummy.
I barely touch the stuff because I will eat my body weight in it. But it's a hazelnut chocolate spread, what did you do to make it?

Also when they say DO NOT put in fridge listen to them, Mrs Basso put my half eaten little jar in fridge since I rarely give into it, but yeah it turns to like a rock and won't get creamy again. I wound up taking a knife and shaving it.

As for myself, I cooked some home made Dal Makhani (indian lentil sauce) it was eh... served it over some white rice. Great dinner.

My first attempt at making muffins. They came out really well. I haven’t really baked for years and with the prices of stuff I’m trying to get gud again. I’ve never done pastry before and hoping to be able to get the hang of it so I can make pies and quiche rather than buy them.

-200 ml of milk
-180 grams of olive oil
-100 grams of brown sugar
-4 spoons of cacao
-1 pinch of vanilla
-1 pinch of sea salt

Im not gonna get into extreme detail but you just cook the hazelnut at 1770 Cº so they get toasted. Ypu put all the ingredientes in slow fire until it converts into a smooth paste. Then just pour it in clean jars where you can keep on fresh areas. Yep. pretty simple actually and way cheaper than buying nutella.

Thank you so much, and what I saw before didn't add skin/peel and I didn't expect that ratio of oil to nuts. When I get fat eating this I'll send you the bill for my gym :P
 
Soups.

I bought some 2% turkey mince because it was really cheap but it was a big mistake. I made Turkey meatballs in a chicken and leek soup and the texture was unbearable. Like papier machè. I went into KF chat and took away some ideas. So sour cream got added. Fresh celery seasoned with celery salt and much better. 20220319_163608.jpg

Discovered the joy of roasting vegetables in the air fryer and made air fried broccoli. Seriously, after all of these months of being too afraid to use my air fryer, I finally took the plunge and I love it. It is so quick and easy, seriously.
I just bought an air fryer and been trying different things. I'll give broccoli a try.
