What Have You Cooked Recently?

Tonight I'm making a Korean feast. The bulgogi is marinating right now. I'll also make tteobokki (I use dashi instead of anchovy broth), and scallion pancakes.
Korean food is the best imo, especially tteokbokki. That sounds like a really good feast.

I got my first Kitchenaid this week! I made some oatmeal bars for breakfast (oats, cranberries, honey, and eggs, let set in fridge then bake) and then made some bao dough that I'll be stuffing with sauteed mushrooms and cabbage. I like kneading some doughs by hand but I love this thing; they're really useful if you bake a lot and I'm excited to look at attachments for it.

I made a pair of whole chickens, with a honey-chili powder glaze.

I do this quite often, as then I have meat for the rest of the week, and you can get Kirkwood whole chickens at Aldi for only around $0.95 per pound. They average around 5-7 pounds, so it is a pretty good deal.

Poultry is probably my favorite meat.
 
Basic butter fried plantains with a little sugar to snack on with my mom while we shot the shit and drank brandy. Afterwards I made this fantastic Cantonese take on western food, a bed of fried rice covered in bechemal with shrimp, imitation crab and any other seafood you'd like topped with tons of mozzarella. Absolutely fantastic, it was like mac n cheese meets rice pudding. You wouldn't think its Asian at all without knowing the origin.
 
Okonomiyaki. It's really become my favorite food recently.

i have a nice hefty cast iron takoyaki pan i whip out on occassion

the occaassion is when my wife watches tv and sees someone eating takoyaki and says "that looks nice, can you make me some now?"
 
I've been too busy to experiment and do fun cooking, lots of throw together meals centered around Costco rotisserie chicken.

I did buy a discounted air fryer but after using it several times I'm on the fence about keeping it. It is the ninja duo basket. I like it but it has a lot of cons. Contemplating returning it. It works great for frozen, pre cooked food, not so much fresh. It is very convenient and easy to use, but bulky and 20 lbs.

basically the decision of Aldi Raw Chicken or Costco Rotisserie is if I'm on EBT at that moment

unrelated and questionably "What Have You Cooked" brought home a big ol container full of nacho cheese, onions, and their miscellaneous pica, tossed some frozen walmart generic seasoned fries in the goop, then fished it out with pork rinds

The thing about making whole chickens/turkeys or roasts, is that while it can take a bit of time, it is easy to do, as you just shove the meat in the oven and then come back in an hour and a half or so to check on how it is doing. You do not have to babysit them while the cook, so it is relatively hands-off, instead of needing to be micromanaged; unlike some types of food.

all you need for good roasted chicken is beer can and a pan, you don't even need beer in the can, just prop up the chicken ass first put it on top of pan to catch all the drippings, set on 350 and come back in 2hrs.

this naked chicken will already create a roasted chicken that tastes great and still moist cuz it's sitting on a beer can

Mostly mushroom (left over from chanko nabe of shitake, enoki and shemji) but some beef stroganoff (this was extra fun as I flambed at like 11am in the morning)

Chanko nabe (Japanese stew famous for sumo wrestling. I used a very traditional recipe but the broth i think it was far too salty and strong and would definitely half it next time) 3 types mushroom..garlic chives.bok choy. Bean sprouts. Pork. Beef. Chicken dumplings. Cabbage. Carrot.

Now omelette for a few days....

I've got about half a litre of chicken stock left over from the coq au vin... think I may just make a bok choy soup. These dishes have all been strong and indulgent and i fancy something light. Any ideas welcome.

I got some recently just having seen it be talked about and have put it on a few things. The one unqualified success was basically just adding a bit of it to chicken breading and frying it.

It is bold but not particularly spicy, although its strong predominant lime flavor still means you don't want to use it to excess.

It's clashed with anything else I've tried, although I bet this would make a fine addition to a fish fry.

Also anyone have an opinion on that Kewpie meme mayonnaise /ck/ loves so much?

It's probably like sazon and only really works on fish and chicken.

I've tried Sazon with beef and it did not go well. It did not go well at all.

I like to put a little tajin on home made spanish rice, baked and grilled chicken and shrimp. Not good on beef imo. Haven't tried it on fish. I've heard it's good on watermelon but have not tried it.
I like kewpie mayo because I like the squeeze bottle. I can't taste a difference compared to regular mayo.

This is really nice with fresh watermelon or fruits like that. (So melon, mango, pineapple/grilled pineapple - also grilled pineapple best pineapple) The lime kick is delicious personally. Very good on a hot day.

Kewpie mayo is sweeter than normal mayo so it works better with Asian cooking as its more salty. So you get salty sweet flavour.

Here are a few things I've made recently.

Starting with fried potatoes, these don't have to be blanched to enjoy them in small chunks.
These can be topped with liquid cheese, sour cream and chive to be like taco bell's cheesy fiesta potatoes:

Beer brat sub with fried bell peppers and onions, with ketchup.
I baked the brats till they were brown and then cut them in half and fried the open sides in a skillet:

I took out the grill and made applewood smoked burgers the same day as the brats:

My fryer is Hopekings brand with two sides, and was about 150$.
