What Have You Cooked Recently?

Friday, I made us bulgogi kimbap.

Yesterday, my husband made us tacos with skirt steak- he marinated it in mostly lime juice, pepper, and soy sauce, we got some of those smaller street-style corn tortillas, and had them with a bunch of cilantro and white onion.

Today, I went back to the store and they had paneer! The lady who works at the cheese counter said she ordered it especially for me and to just let me know when I next need her to do it, so I filled in one of those appreciation cards in-store and with corporate. I'll be making saag paneer with spinach and mustard greens as well as aromatics and spices of course, and I think I'm feeling well enough to make some homemade naan so I'll probably get started on the dough in a few minutes so it's ready to bake at dinnertime.
 
I made some homemade calzones the other day. Took some beer pizza dough, put some mozzarella, ricotta, ham, portobello, garlic, and some Italian seasoning inside, folded it up, and let it go in the oven for 15 minutes at 475 F. Came out perfect, didn't have any sauce with it because I didn't feel it needed it.
 
Japanese curry, well, at least ghetto style. I used the S&B roux (which is called extra hot but if you've used it you know it really isn't). Just did the vegetables in the curry, served over rice with katsu chicken on the side. It looked like a plate of sloppa (which it was) but was good enough to eat and will be good enough tomorrow. I Jacked it up a few ways by trying to combine three different recipes, and made a homemade katsu sauce that I don't think I'll use again.

Still, it's what's for dinner tomorrow too. Curries usually improve after a day melding in the fridge.

Also used a bit of ghost pepper powder in it, but not to make it so unreasonably spicy it couldn't even be considered semi-Japanese any more.
Add red miso, makes a world of a difference.

Came home buzzed after fishing last Sunday and made myself some drunk barf dip nachos.

Mexican blend velveeta cheese and cream cheese melted with hot Italian sausage and serrano Rotel chilis mixed in, sour cream, hot salsa, and jalapeno slices, on a bed of spicy nacho Doritos.

Honestly boys I'm ashamed of myself.

Made a simple Italian-seasoned grilled chicken breast on a bed of farfalle tomato-basil pasta. I might try adding a little more to the pasta next time, maybe some mushrooms or something like that.

it’s big but it was very tasty!!!! things i’ll do differently next time…trim the sheet in half and spread the rice across both so it’s not so big lol. also use a more ripe avocado, add some more fillings (i’m broke ok). it’s my first time so i’m genuinely surprised it turned out halfway decent i’m proud of myself!!
 
Monday, I made breakfast sandwiches for dinner. Folded egg, a bit of bacon, a slice of baby swiss, and roasted mushrooms on a brioche bun. Side of roasted tomatoes. My husband had the worst, longest day at work in recent memory and he wanted something substantial and comforting and we had all the ingredients on hand.

Tuesday, I made blini with salmon roe, dill, and smetana. Kids had Valentine's McDonald's coupons from one of their friends so we let them have chicken nuggets, almost insulting to see their salt and fat receptors go crazy for it lmao but I guess it won't hurt once in a while.

Wednesday, I made vietnamese style soft spring rolls with mostly vegetables and rice vermicelli, I added avocado in mine and avocado + shrimp for my husband and kids.

Today, I'm making pasta with a spicy red sauce. I'm pretty sure I've explained how we make this variation before- garlic, onion, herbs, hot italian sausage, carrots, celery, mushrooms, puréed tomatoes, then I reserve some for the kids, and add habaneros to the big pot for my husband and I.

Friday, I'll make lamb gyros with tzatziki, red onion, lettuce, and tomato if we don't have enough pasta left for a whole dinner. It's usually good leftovers for lunch, but we're both feeling worn out so it might be nice to have a dinner requiring no prep.

Saturday, my husband wants us to visit another friend so I'm guessing he'll be teaching him to grill since his dad never did. Most of the time we visit him and his wife, they just pick up whatever food he wants to learn how to grill and my husband prepares it and explains the process whilst I have a beer or two and hold our youngest lmao so it'll be a chill day for me.
