Mattar paneer. Paneer is surprisingly easy to prepare, going to add it to the weekly meal rotation.

Looks fuckin' terrible but I'll take your word for it.I have this self-made potato dish I lovingly refer to as Potatobomination.
You put on some onions, garlic and fiery sausage (something like Hungarian kolbász if possible) on hot oil ( prefer coconut, but sunflower is fine too), put some chopped up potatoes, carrots, paprika, broccoli, some steamed frankfurthers and occasionally some bean or corn). I add some salt and spice it up with some thyme, marjoram, rosemary, dill, parsley, just a touch of cumin and a bit of ginger if I'm up to it. I put it in the oven and stirr it up three or four times ever 15 minutes till the potato becomes golden brown and soft. At that point you crack some eggs on top of it, add a bit of extra salt and bit of seasoning that goes well with them (turmeric, powdered paprika, a smidge of tarragon). Wait another 10 minutes and lo and behold, the Potatobomination is finished.
Ideally the potatoes should have the same softness as the baked egg, and all the juices from the ingredients join forces with the spices to form a delightfully succulent dish. My cellphone makes some pretty shitty photos unless the lighting is perfect, and it might not be much of a looker, but believe me when I say that my little culiary monstrosity is freaking delish!

Looks like a garbage plate. That's actually a dish mainly around Rochester NY that looks like a pile of vomit but is delicious and packed with horribly bad for you stuff (also including potatoes).

I have a similar abomination creation with potatoes and random junk.
I cut out wedges, boil them for a couple of minutes (to reduce starch/make them softer), deep fry for about 5 minutes, then throw them in a dish like you do. In the dish I add onions, spicy sausage, salsa, and some beans if I've got them. Season, throw that in the oven for 20 minutes then garnish with cheese.
I'm currently making a stew, they're easy as hell to make and are really wholesome. You can pretty much throw anything into them and it'll come out alright, you just need the patience to leave them cooking.
I've been trying to eat healthier so one thing I'm making quite often is mushrooms stuffed with tomatoes, garlic and TJ's low fat feta. 4 ingredients and olive oil, maybe 6 minutes of prep if you are slow with a knife, and it tastes great.
Some kind of weird franken-chicken and beans. I have chicken, black beans, kidney beans, a can of crushed tomatoes, paprika, cumin, onions, garlic and red pepper in a crock pot. It smells really fucking good so far. I think I'm going to shred the chicken and serve it over rice.

Crock pots are amazing. I used mine at least once a week. Since I live alone. I usually get two or three servings out of one cooking, so I have a nicely stocked freezer for when I don't feel like cooking that day.Man, I have to try that out some time. Those crock pots sound really useful as well, I should invest in one sometime soon. What do you usually out in your rice? Aside from the typical salt-and-laurel combo, I like to spice it up with some turmenic, anise, basil and ginger. It gives the rice this really nice flavor and aroma. Oh, and a whole piece of purple onion!
Try googling 'Spinach, Lettuce, and Endive recipes' and see what you get.Wtf can you make with shitloads of spinach, lettuce and endive? The garden has overproduced and all my neighbors are Asian and dont eat much of what I'm growing (I gave my neighbors some radishes and she tried peeling it)
