What Have You Cooked Recently?

I had recently tried to repurpose chicken marinade as an all purpose gravy/sauce. Cooked through, obviously, because of contact with raw meat.

Verdict: Didn't turn out so well, largely because it needed more time to reduce.
 
i made a cookie in the microwave. like an actual cookie not something you reheat for a few seconds to warm it up. it didnt turn out that great. maybe its because i used dark brown sugar instead of light brown sugar or i used not actually butter instead of actual butter or something. dont really know yet
 
I've already devoured about half a loaf of the banana bread I made to use up the funk-ifying bananas I had. So damn good. I also made stuffed peppers last night. It was a recipe I hadn't used before and I thought the cooking time seemed shorter than my usual recipe. The peppers and the acorn squash in the mix both ended up on the undercooked side. The other recipe I use has you soften the peppers in the microwave instead of the oven to start, and I think that's the right way to go. The squash might have even needed some pre-microwaving.
 
I made potato gratin with imported gruyere, shallots and cream.

Leftover mishmash
Old cooked dark meat chicken
About three quarters of a red onion
chopped the onion
Stripped and chopped the meat
Added a bunch of taco seasoning, a hot of salt, and some Kickin Chicken seasoning, threw it all into a big bowl, nuked it low for a bit tossing it every few minutes to get the seasoning and the onions going
Forget that I'm out of aluminum foil so I use big cookware instead
Line the bottom with corn chips, dump the chicken slop, shredded sharp cheddar on top, at 375 for like ten minutes.

Squash is on sale everywhere so I made some butternut squash soup for my grandma in my instant pot. Here is the recipe if anyone cares
I did use regular cream in place of coconut milk, I wondered what kind of odd flavor the coconut milk would add to the soup so I went for cream.

I liked it, my grandma liked it and the part that took the longest was cutting, gutting, peeling and cutting the squash

Hazelnut meringue cake, with whipped cream and home made dark chocolate Nutella. Only 290 calories per serving, if you use sweetener instead of regular sugar.

I fucked up the meringue layers by not properly anchoring the parchment paper to the baking sheet. I normally marble them with melted dark chocolate, but ran out because hubby couldn’t stop snacking on it.

Still tasty though!

Meatballs and mashed potatoes with a green pepper sauce - I didn't make the green pepper sauce and I didn't know that I had bought it. I thought I had bought brown sauce, the kind you find on IKEA's meatballs.
I usually don't use breadcrumbs in meatballs if it isn't christmas but I had a stale croissant that I had forgotten on the counter and they are already flaky when fresh. So I crumbled up half of a dried croissant in a bowl, added spices, herbs and cream, let it sit for a while before mixing it in with the meat. It was good.

I did the same recipe but stove top Dutch oven, and immersion blended it. I halved the squash and roasted it first which makes peeling and cubing it much much easier. There’s so little coconut milk I didn’t notice a distinct taste, especially because it’s very well seasoned so it overpowers the coconut. I used it because a family member is vegan. Unluckily a wasp had stung me right square in the palm of my hand right before making the soup, making dicing onions and apples and squash much more uncomfortable. I also offered people either smoked paprika or nutmeg for a more savory or sweeter experience.

Another crock of pot-au-feu, this time I switched from amber ale to Czech pilsner. Smells pretty good, slightly different from the last crock.

Some sweet simple breakfast for dinner last, eggs, bacon, bacon gravy, hash browns and biscuits. I wouldn't advise it too late since it's a hefty meal.

edit: What a filter, that was hashed potatoes.
Since I scored some normally $15/# veal leg slices (yes I'm a monster) for $3/# I of course had to make wiener schnitzel. Turned out very well.
It's such a bitch to find veal in my town unless I hit up a butcher yet I must always make schnitzel at least once a season. I've gone out of town just to score veal before.
 
Chicken parmesan fully breaded with a homemade sauce I froze a few weeks ago. Made it with a simple side salad of mixed greens, red onions, tomatoes, carrots, and cucumbers.
 
Kluski, which is basically the Polish version of gnocchi. Boil them, then sautee in a pan with bacon and sauerkraut.

I love gnocchi, so I'm def gonna give this a try.

Anyhow, on my end- I have a nice way of making mashed potatoes that makes them come out velvety smooth, touched that up with a garlic and herb blend and some gravy, and my first ever pork-chop. It came out pretty good!
