What Have You Cooked Recently?

I made beef gyudon like what was in this recipe, but no egg on top.
Damn, looks like I know what I'm cooking for dinner tomorrow night!

Tonight was a boring simple food night. Just chicken tenders drizzled with olive oil, seasoned, and baked in the oven. Came out a little dry, but I'm gonna blame that on the fact I didn't brine them this time.

Green chicken chili with queso fresco. Been vibin' on tomatillos lately.

I'm making corned beef, cabbage, and soda bread today with mint brownies for dessert (yes I'm American).

Yesterday I layered in a baking dish- ready-to-eat broccoli florets (that I lightly steamed in the microwave), cubed chicken I cooked in the instant pot, a quick sauce made with a roux and the cooking liquid/broth from the instant pot, Monterey jack, and buttered panko. Baked until browned. Pretty decent for something I threw together quickly.

Instead of the corned beef and cabbage, I made Guinness stew for dinner. Turned out alright, I needed more onion.
However...
My butcher had beef cheeks when I was picking up my stewing beef. I'm frying up their side's and slow cooking them tomorrow while I'm working. I might serve them with horseradish mash potatoes or neeps of some sort.

Of course I made the obligatory meal of the day. Pierogies with cabbage.

If you're ever in the area. It's a pierogi experience.

I grilled up some dry aged top sirloins last night and made steak salad. Nothing beats steak, bitter greens, gorganzola. Get a little protein and don't feel too bad about it.

AZ is probably a little out of reach for me, but there's a little deli that sells those good old church lady pierogi, and about ten different types of kielbasa, up here. I have to stop there for butter lambs, on Saturday. That really does look amazing, though! If I ever make it out west, will go!

Honey Soy Chicken Bake. You take four skinless boneless chicken breasts, marinate them in a mixture of soy sauce, honey, ketchup, and garlic, and bake at 350 degrees for 45-60 minutes (turn the breasts over halfway through). We had them with brown rice and sautéed cauliflower, onions, red peppers, and mushrooms.

Lamb has such an odd flavor but when done right it's delicious
It's peculiar that it has quite a gamey taste yet is more popular than say grouse. Annoyingly its priced at a premium here that far exceeds demand, aside from leg.
Porchetta
Noice. Last time made it, turned out cheaper to buy belly and loin separately which is insane.

In keeping with my desire to cook Louisiana food tonight's dinner is catfish almondine

It's supposed to be served with green beans almondine but I only had left over corn and potatoes from last night's crawfish boil. Anyway to any kiwis on Louisiana I must say you have some damn good food.
I know this is going to come out sounding really lame, but your knife is pretty fucking fancy looking.

Made home made chicken soup last night.
Finally took all those chicken bones I've saved up in the freezer out.
Let those babies boil in some seasoned water for about two hours, drained them, then added the veggies, chicken and egg noodles.
Came out great.
Used chicken thighs instead of breast because they have a bit more flavor, if a bit tougher.

Okay. Fuck me, but I agreed to get the food blessed, this year. I think the list should be candles, eggs, leavened bread, poppy roll, butter, salt, horseradish, lamb, kielbasa, ham (Easter is a meal of many meats) chocolate eggs, jelly beans, and wine. What did I miss?
That kvass starter to make white borscht! Might look into making that myself I think.

I'll likely get flack for this but a ham brined in cola and finished in a cola, mustard, clove reduction is as tasty as it is trashy. Bless the thicc cocaine fiend nigella lawson.
