I attempted to make a gluten free, dairy free meatloaf using equal proportions of ground beef, black beans and potatoes. I haven't eaten it yet but it crumbles to the touch. Pray for the redemption of my soul.

Just use gluten free bread crumbs. Also egg helps for binding. My meatloaf is actually passable, BUT I have to give it one hell of a second cooking (pan frying). It crumbles like a Latin American economy though. Because of the potato filler, the second cooking leaves a nice crust.Just use gluten free bread crumbs. Also egg helps for binding. I like red lentils in my loaf
