Why do we put so much stock into loli/underaged characters as a direct link to being a pedo?

I doubt this logic.

The stuff people like in porn is usually not what they want in a wife or even in sex.

Women like rape porn. They do not want to be raped.
Cuck and incest porn is popular. These are still widely seen as degenerate behaviors in real life except for by a view political activists who like it for deeper reasons beyond porn.
People of various groups like "oppression porn", but obviously do not want to be oppressed.
"Barely legal" is obscenely popular, but pedos are near universally despised and many zoomers even treat 25 as the "real" age of consent.

There is a very clear barrier between fantasy and reality for such things. Hell, you could apply this to any media. People who despise war and violence can enjoy media featuring it.

Actions are different than attractions so this isn't a 1:1 comparison, which is why playing violent video games doesn't mean you desire violence but if you're a dude attracted to gay porn then you're a faggot, even if it's gay hentai. Age is more ambiguous than gender in hentai, so to be fair that's not 1:1 either, but it's close enough for comparison.

Plus, even though most women who are into rape porn probably don't want to be raped, I'm sure the likelihood of women who do actually want to be raped is higher in the rape porn watching vs non-rape porn watching categories.

Another factor for consideration is men & women are different. We acknowledge that a woman who watches rape porn probably doesn't want to be raped, but if a man is into it that could be a red flag. Not necessarily of course, but I'm sure men who are really into it are more likely to be rapists or who at least want to rape.

Sex & violence are inherently different, it's apples & oranges. A closer comparison would be food. If you like the way an apple looks on TV and find it desirable to eat, you'll feel the same way if presented with a real apple. There's food centric anime too, and people get hungry watching them. If you see an anime apple and think "I'd sure like to eat it", odds are you'll be interested in a real apple.

People tend to take possession and display of lolicon as an indication that this person is sexually aroused by children. So unless you're a horny 13-year-old yourself, it's pretty inappropriate to get sexually aroused by kids that young.

I don't think they exist but that would be extremely concerning. What probably does exist is people jacking off to depictions of violence against women, but outside of porn games I'm not sure any have sufficient enough material for that. I haven't played them, but Punisher and Saw have torture minigames and maybe there's female targets in them? I doubt they'd have the balls to include women in those segments though tbh.

The Punisher game has a scene (based on the same scene in the Punisher MAX series its based on) where you kill a female mob boss. Saw 1 and 2 have women as targets in Jigsaw's traps that you need to rescue. None of the scenes are presented as titillating or anything. The violence against women/ryona stuff is mostly limited to either hardcore BDSM or hentai/porn games.

Yeah, I'm familiar enough with the IPs to know they don't intentionally sexualize the violence, but I'm sure the subject matter itself could be inherently arousing to people with certain proclivities. I guess think of it like foot fetishists, depictions of feet typically aren't supposed to elicit a lewd reaction but I guess they can (somehow). Not to suggest the two are equal btw, just a comparison.

I think it’s reasonable to assume “loli” is typically being used as a catch-all by those who denounce it. Those who do not watch it are obviously unlikely to know the minutiae of how Japanese animated child pornography is categorised.
