Thanks for the link! This is a much better starting point than my (admittedly half-assed) JSTOR search.I'd start with the stuff Gordon Parker did, he focused specifically Bipolar I & II and sensory alterations, that should open up the rabbit trails of references.
I haven’t had a chance to dive too deep here, but my gut instinct is that it’s probably a combination altered perception and plain old disordered eating… and maybe a dash of Lucas’s need to seem unique, interesting, and intelligent. I think it’s very likely that his mental illnesses affect, to some degree, his sensory perception and his fucked up relationship with food drives him to eat regardless of taste or nutrition. I also wouldn’t be surprised at all if, given his disorders, Lucas genuinely believes he’s stumbled upon something genius that should be shared with the world. And I think that ego might play a role in what he finds palatable, too - if he’s truly convinced that he’s a connoisseur of good food, he’s probably convincing himself that his insane pairings are actually good.
Anyway, I’m drunk and should probably be sober and working on my actual dissertation instead of pondering why a hobo in Spokane put mustard on a protein bar, but here we are. That’s my theory.
