These restaurants you're referencing are King Solomons palace and Asia Glatt, both Russian Jewish restaurants in Flatbush near Brighton Beach/ocean parkway. There's also the slow creeping of gourmet culture into the kosher community where the food they eat is constantly being expanded on as they learn more and their chefs experiment. The entire time I ate kosher (2 years, give or take) I was adapting gentile recipes to suit the cooking style, because the trad Jewish dishes are all pretty bad. IMO they're the worst of slavic and eastern eu cookery, plus the worst excesses of industrialization.
