A child's first model of love and relationship is their parents, and all of us emulate that model, or learn what not to do to one degree or another. I think Nick might have seen his parents dynamic and sublimated it into his own relationship. He on his most fundamental level thinks that it's the husband's job to be the quiet accepting pushover who lets his crazy wife be a kooky weirdo, laugh it off and allow her to run her course. But even if it was an expected thing, it clearly wasn't an immediate windfall, and I doubt Nick was diligent enough at 23 (or ever) to plot out a 10-15 year long game involving that particular and susceptible girl and a projected 5 or 8 or 15 kids just to get a bigger piece of pie. I'm sure he multiplied with full knowledge that he would be able to afford kids, but for real, though he's a twit and a schemer, he's not enough of one to fake a religious breeder mind-state and create kids until he reached some optimal proportion of whatever money could come his/their way. His current life situation pretty clearly shows he is no mastermind 9 steps ahead of everyone else.

Celeste may be an oil heiress or whatever, but I think she came into her inheritence once her children were already grown up. This would track with Nick's account of being a hood nigga from the skreets of Houston, whose parents struggled when he was young. He grew up middle class, and once he was a young adult his parents were able to assist him financially, and felt obligated to since he had "done the right thing" by going to college and getting married and being Christian and having kids. While people are capable of forming good marriages young, most people aren't fully baked and don't understand how expensive their children will grow to be.
People live their lives, then write their autobiography to make sense of it at a later date. Nick's "life story" as he left his thirties and entered his forties was that he was a successful, happy papa and husband, a trad dad small firm lawyer with a hot wife and a happy marriage. The pride he exhibited over his five kids is probably a stark difference from the struggle and grind it took to make them. I don't think he set out to have a big Christian family, that's just how the chip fell, and he wrote the lore to justify the ledger.
Any co-mingling of funds (e.g shared accounts) from the trust is fair game for Kayla. This is relevant for Nick because we know that he is chronically disorganized. She has a right to approximately half because it is considered a marital asset. Say Nick owns 100 shares of Tesla that he bought from trust funds.
Minnesota isn't a community property state, but when they got married they had nothing, and came up together. She didn't work and raised his kids (at least on paper). He's fucked, because he did not enter the marriage with any assets separate from her. He owes her alimony and child support x5. I guess if he can wait a year it'll only be child support x4.
Nick thinks his future lies in LA, not Bumfuck MN, so I doubt that he'd care if a settlement was negotiated where Kayla keeps the house until the youngest is an adult.

We don't know if Celeste was married in the church the first time, second time, whether she was a good standing Catholic when her daughter was born or Nick was born, whether she went to mass every Sunday or got her kids baptized. Nick is a flaming heretic so I somehow doubt they were praying the rosary and observing holy days of obligation. A whole lot of people profess being Catholic without giving two shits if they are in good standing with the church.
