You talk about whatever shared interests are evident from her profile. You just have to not make the mistake of bringing male competitiveness and elitism to your conversation as shown in the OP. This is also part of why dogs are seen as a social cheat code, they're an instant low-stakes conversation starter and anyone worth calling themselves a human being is at least neutral towards animals.
Granted, lots of women don't even bother writing anything in their profiles and upload nothing but selfies, but you should take that to mean they aren't really worth your time.
