Fucking hell, both the pork and the chicken appear to be raw. Not rare, not even slightly undercooked - but fucking raw. He could literally kill someone with that if he's not careful.

Long telomeres aren't going to protect you from severe food poisoning at all.

To be fair, I think the implication is that he's going to cook it later. That being said, I'm sure Gordon Ramsay would have a stroke if he were to step foot in Lucas's kitchen.

Many people live dishwasher less.

Lucas cooking is flat out dangerous, as well as gross with no grasp of balancing flavor etc. I don't know everyone else's level of cooking skills/hobbies and tastes here but when someone is universally seen as a threat and vomit tier, there's a reason.

Many pots and pans etc can't be put in a dishwasher, so it's just Lucas doesn't do basic safety maintiance, lots of safe clean quality white flatware gets stained up, while being fully sanitary, sometimes it's able to be taken off others it's not. I'm a bit a clean freak so I pour in some baking soda and water to pull the stains off the inside of my white coffee mug. Works for other stuff, but after a trip in the washer or hand wash, it's safe to use.

He's a nearly 40 year old man who doesn't do his dishes and tries to cook with them, and accuses you of bigotry to not want to be sick.

Where I live there are group homes where people with mental illnesses live mostly alone or in a roommate situation depending on how able they are. They have a caseworker who checks on them and basically make sure that things like eating raw chicken or them turning to hoarders doesn't happen while still training them on personal responsibility. You don't have such a thing in the US I guess? It's perfect for quasi-functional people.

We do have them, and WA state is one of the better equipped/funded states in regards to that stuff, there are 2 main reasons I see this not happening, Lucas legally can refuse their help depending on the conditions of his release, I see this most likely as his ego is the size of the moon (or his pot belly). Or he's not worth a fight to them. Having to try to commit someone against their will over an upset tummy is gonna be how it looks via the paper work. Possible 3rd, he's under some care in where he stays and this part isn't monitored.

Lucas walks a very fine line here in our healthcare system, where we can't just keep him and has some rights on the outside, it's his personality that keeps him in a cycle of crossing that line where he's viewed as enough a danger they drag him back to the 'bin. I'm guessing making gross food isn't worth the time to them.
