What Have You Cooked Recently?

Within the last day: chocolate crinkle cookies, maple cookies, lemon butter with coconut shred cookies, potato kugel, jasmine rice with tahdig at the bottom, and sautéed fake shrimp (made out of whitefish).
 
Decided to use the last of my kimchi in some egg fried rice served with some sweet/sour chicken

Yeah this is officially one of my favourite foods of all time now. Like to the point where it might even start rivalling Jambalaya for the top spot

Unfortunately I have to wait 4 days till my next batch is ready so till then I have to sustain myself on experimental saurkraut that I made a bit too salty.
 
Wish I'd taken a picture of it but I made a honey custard pie with wild blueberries in it

Little bit of background, where I'm from (way back in the woods) we all have a recipe for honey custard, some people make creme brulee out of it and some people put it in a pie, my mom's and my version is really light and fluffy and acts like cheesecake so we always put it over a graham cracker crust and since blueberries grow wild out where we are in their hundreds we always mash them and swirl the puree through the pie itself, topping the whole thing with blueberries

It disappeared very quickly, the honey was locally sourced as well, I got some real good butter and cream from one of the local farmers and eggs from another, cornstarch sugar graham crackers and vanilla from the store of course, and yeah, it was awesome

cut a boneless chicken breast into nuggie size chunks, pan sautee with a bunch of garlic with olive oil sludge from the jar, some salt and pepper, medish temp for a few
lid after a bit to steamish it, let it go low for a while
plain / 10 nice enough for what it is

Used a can of flaky biscuits instead of southern. The way the three pieces come together and flake up, how the cheese crisps, and the spices are very visually pleasing. They taste ok but it is a quick and easy way to transform some cheap ingredients. Next time I’ll do Italian seasoning instead of just oregano.

I also made kielbasa stir fry and rice with pineapple and mango preserves. Also good.
Why not make your own biscuits? Canned ones are trash.
 
Chocolate Snack Pack Pudding + raspberry preserves, stir and it becomes raspberry chocolate swirl.

I am currently eating fries. Dipped into ketchup and mayonnaise. Fries were the original fries that were made from slicing potatoes into pieces of potatoes and then frying(baking in my case).

campfire chicken thighs. Very easy to cook over a campfire in a small saute pan, much easier than steak, where you really have to know what you're doing as the heat varies so much. It's almost impossible to fuck up the thighs, if you overcook them by a few minutes it really doesn't matter.

I buy them pre-seasoned makes it much easier, if a bit more expensive. Chicken thighs are cheap AF tho.
 
Ok I guess I’ll walk you through my thought process as I made my dish.

So here we are back in my kitchen.

It’s not perfect but it doesn’t need to be

Almost all the food in the house currently sits in the fridge.

Ok here’s what I’ve got:
1 half eaten mango. I like them, but their a bit to sweet for me.
A bag of plums. Nice but not for dinner
A bag of apples. Same as above
A bag of dried cranberries. Same as above except I’m not to sure about cranberries to be honest
Peanut butter. I’ve been picking at it when I don’t have food
Old grapes. They are old.

Also there is a misc. as I’m just going to group the rest of the condiments; whatever’s in the bowl in the bottom, the jar of who knows what, the Chile’s at the bottom, the green salsa, the beer, an onion, and a strange piece of cheese.

Ah but luckily I have a plan

And it involves tortillas

I’m just gonna throw these on the stove real quick, get em nice and crispy and then dip them in the green salsa. I like this because it gives me a hint of what the tacos I get are like, but this isn’t fufilling like the real thing.

Smoky Chicken Burrito filled with my experimental Caribbean kimchi and some homemade Jamaican rice and peas

The chicken was poached in well spiced and seasoned stock in accordance to both a documentary about medieval english cooking and the advice of an ex curry chef and came out insanely tender, juicy, and flavourful before being mixed into the smoky sauce. The Kimchi contains elements of various Caribbean spice mixes and stock Caribbean vegetables. The rice and peas was a spur of the moment thing but the coconut element really went well with everything else, and in the context of a burrito it meant my dish wound up being a fusion of euro/murican/african/asian cuisine

God help me I am straight up addicted both to kimchi and to Caribbean cuisine

If you're ever in NYC make sure you hit up Crown Heights. Especially Kingston Ave. My goodness any carib spot down there is unreal. If you're ever by the BK Museum there is this spot called "The Islands" that serves the best fucking pigeon peas, greens and jerk chicken. The staff is stoned out of their gourd but the food is unreal.
