I find it hard to believe Jen was ever over 300lbs because his skin isn’t saggy and there doesn’t appear to be any surgery scars. I mean, PL but I’m not a doctor, but wouldn’t going from that weight to literally skeletal have some effect on his skin?

If he was 300lbs at 17 (2001) and over 6" (I'd guess he's at least 6'3" now, but I'm basing that on the pic of them at the table and Kevin and Penny's heights)...
If he's 37 and he trooned out at 23 and the weight loss was part of the trooning, then no, there wouldn't be much of, if any, effect on his skin. Under 30 the skin is pretty damn elastic and can manage a weight loss of 100 or so pounds without the sort of excess skin you see on middle-aged deathfats who've been 200lbs+ overweight their entire lives.
Edit: Also filters to obscure whatever silver stretch marks he may have left from 20 years ago... although you can see some textured stretch marks under his armpit going down over his ribs. Actually over his lower back as well... I bet he looks like a goddamn malnourished zebra IRL.
