We don't actually have an idea of how much of the Earth Eren ultimately succeeded in destroying, only that he didn't wipe all of humanity out. Eren himself never left Marley, and he was the head of the colossal Titan contingent. Assuming the Titans' rampage radiated outward in sphere with Island as the central focal point, they could of have conceivable hit multiple continents at once that were in range, but a significant portion of humanity actually survived due to Eren dying prematurely. Isayama himself leaves it vague how much of the Earth was destroyed, only making it clear that the Rumbling didn't set mankind back that far, since they reached modern technology levels and destroyed Paradis within a few generations.If he wiped out 80% then that should have been enough damage to the Earth to render it uninhabitable by your logic, otherwise you're suggesting that 20% undestroyed was enough to have no lasting impact on humans whatsoever, as they were thriving. So how much would be the point where it's too much and then everyone's extinct? 85%? You seem to know exactly how much Titans damage the ecosystem so I'm curious how close to doomsday they got.
