What the fuck would "Smash Bros Kart" even be? It'd just be Mario Kart with MORE Nintendo characters and stages?

That's just going to be Mario Kart 9. There's no reason to not capitalize on the Mario Kart name when they already have stages and characters from other franchises in there through Link and Mute City.

Edit: Is this what we have to look forward to for the next 8 or so years? Mascots getting a big grassy outdoor environment with ruins and vague tech effects while soft piano music plays in the background?

There's just tracks floating in the sky? Who built those tracks? Why didn't they make an effort to blend them in with the natural environment? When you put realistic environments in your game those environments have to start making sense and not looking like "lol videogame parts go here".

Sonic: Open World makes me think of Banjo-Kazooie and how as a kid I always wished the world could be bigger. But what I didn't understand was how the enclosed spaces contributed so much to level design.

Worst case scenario they poach another long running game and make it so if you want to play it you need to sign up for an epic games account ala rocket league. The only thing that matters to them is getting more people to sign up.
Look at the top 10 to 100 on steamcharts and place your bets on any game running on Unreal. It'd never happen for a host of reasons, funniest of which being the lawsuit a few years back but PUBG would fit the bill.

On that note and the most likely thing to happen is already what I described above: Epic Games recently acquired Mediatonic aka Fall Guys and turned it into a free to play so they are probably going to rub that into everyone's faces.
