Alternately, I have a feeling that our culture is becoming stupider as its entertainment is becoming supposedly smarter.
TV isn't getting smarter, if anything it's getting deeper, an that's not meant to be a good thing.
I haven't seen Steven Universe so maybe I'm not the best person to give an opinion, but I've read the Wikipedia page on it and hooollyy shit. The show seems needlessly complex, gem people, ancient aliens, the boy is his own mother, plots to destroy the human race, pretty complicated for 11 minute segments.
That's not smart, that's the rambling of a crazy woman. No shit people are over analyzing it.
You want smart, go watch the episode of Rocko's Modern Life where he gets a credit card. Short, clear, and used funny shannegians to teach a real life lesson.
Simple doesn't mean stupid and these shows aren't getting smarter.

He's probably a neckbeard that managed to do slightly better than most and actually get a job. Explains why the main character is who he is.

I find it hard not to agree with you, really. After all, some of the best things were often said simply. But this is apparently what the culture wants now - stuff that's needlessly complicated and supposedly deep. ...It's enough to drive you into a nostalgic stupor.

Yes, Heffer was a fat overeater and there were a few episodes addressing it, but at the end of the day he was still Rocko's friend who was loved by his friends and family.

Comparing Rocko's Modern Life to Steven Universe is akin to comparing a well-cooked meal to a shit sandwich. One is objectively superior.

It would be much easier if they had thirty-minute episodes instead of eleven; it's way too fucking fast-paced as it is now.

Somewhere along the line Cartoon Network decided all their shows had to be 11 minutes long. Chowder and Flapjack were the last shows produced in half-hour format...
 
Something that's been popping up recently is "racially coded" in the character design. It's mainly used for Garnet, who despite having reddish purple skin and being a fusion of two smaller humanoid aliens is Black because of her hair, her lips, and her VA Estelle.

Pearl and Amethyst's VA are Asian, but the characters aren't "racially coded" because they don't have "Asian features".
Oh yeah, I can never get over that "coded black" nonsense when it comes to Garnet. Which is why any art that turns her white becomes pretty funny whenever someone uses that phrase. WHAT DOES IT MEAN?

Whitewashing is basically lightening the skin of a Blac-POC character. That doesn't apply to her because she's not human. But yeah, the fandom treats her like some ~cinnamon bunroll uwu~ and it's annoying.
 
If she's red, why don't the fans take the opportunity to draw her as a native american? Surely they're good for some oppression points?

The problem with this fandom is that... it's stale. We don't have much to laugh about beyond SJW freakouts, sperging about how good the show is, and "misinterpretations" of characters driving the fandom insane, unlike bronies or furries who often have something new and stupid to bring out every once in a while, as well as the fact that SU's fans aren't really into rule 34. In fact, they usually despise it, as you know, SJWs do. However, with show returning soon, we could hope to see more shit from them.

Thats the "gem" of this fandom. Every one of them has their own quirks. In this case since they are not symbolized, color coded, and has the exact same body type, they attract different audience.

Compare the difference between Brianna Wu and Lenoard Shaner, for example.
