What Have You Cooked Recently?

Saw some tasty looking curry buns yesterday when I was out and about, but they were too expensive. Plus, they didn't have everything I was craving in them. (Mushrooms, ginger, vegetarian substitute, etc.)

I used crumbled tofu, mushroom, onion, garlic, ginger, paprika, red chili flakes, then I cooked all of that on low for about 30 minutes in a mix of hoisin sauce, curry powder, and a pinch of salt. You can use whatever meat you like, I was just in the mood for some tofu.

The dough, I started with warm m.ilk, yeast, a pinch of brown sugar, and salt. Then gradually add flour while whisking, then knead for about 5 minutes. Left it to rise (I suggest leaving it near the stove, or somewhere warm, as it will rise waaaaaaaaaay faster that way) for a half hour.

When that's done, assemble your buns (3 tbspns each, just make sure you don't overfill) with the puckered side face done on a buttered baking pan, brush them with egg, then sprinkle some sesame seeds and bake for 20 minutes at 350 Fahrenheit.

There's an asian grocery sorta near me that has fresh buns in. I should go by there sometime soon.

I had a fairly successful attempt at a juicy lucie tonight. Aldi had a pack of 80/20 ground beef marked down so I got that, some extra sharp cheddar.
 
Homemade tacos and chicken sandwiches.

I really enjoy eating Mexican food from places like Taco Bell and Jimboy's. But it cost a lot of money just to purchase a meal which I remind myself I can do much making my own at home and saving more money as a result.

Basically cook the ground beef, stir in the mix, and then use whatever filling you want to put inside the taco: salsa, cheese, veggies, etc.

The same with chicken sandwiches. Depending on the fast food restaurant and location, I can probably get a good deal on a hopefully delicious chicken sandwich. Unfortunately, you guessed it, they're pricey!

Jack in the Box in my opinion has delicious chicken sandwiches. However, I don't want to pay $5 to $7 dollars on a chicken sandwich if it's going to come out gross looking and make me wish I saved my money.

So I basically make my own with either a chicken patty or chopped up chicken left over. Pretty simple and I have the full control in how I want it to come out before I eat it.

I did my first try of turkey today. Just a breast, but I stuffed it and roasted it and basted it as it was cooking. Came out awesome. Also made some chocolate chip cookies using the Tollhouse recipe on the package (does anybody actually use anything else?) and they came out good as always.

Made some hamburger dogs recently with bourbon cheese, on a New England-style potato hot dog bun. Pretty good stuff, lemme tell you.
 
Just made mac and cheese. It' s not something that is eaten where I live but I once ate it in ireland and it was awesome. So yeah, I tried it but it didn' t really turn out how I wanted it. I mean it' s probably not bad but meh. I used cheddar and gouda, next time I' ll try something different.
 
Stuffed zucchinis. Stuffing made with garlic, diced bacon, fresh cream, shredded Gran Padano and shredded emmental.

I'm making lo mein in the crockpot right now from a recipe I found online. The aroma of sesame oil is wafting through the house.

So, made this weird casserole with mashed potatoes, kielbasa, sour cream and cheese. A variant of Shepherd's pie. Not too bad, actually.

I made some sourdough brioche then used it to make some pesto and sun dried tomato braided bread. I baked it kinda hard because I have a problem with loaf-pan breads being done looking on the outside but then underdone in the middle and I didnt want it to sink back, so the braid effect was lost but the brioche rose well and it's so soft and buttery and fluffy because I braided it. If you look up babka, I did that. Also it basically almost smells like pizza. I put some parmesan on top before I baked it, and then melted some more on when it was cooling. When I cut it Im gonna take pictures of the crumb but Im excited for it!

EDIT: When I cut it, it didnt actually have as much of a swirl as I expected. I didnt use a ton of pesto because I knew it would fall apart when I was assembling it, the layers don't stay together but they rise and bake together. I also didnt want the pesto to overpower, so I used a thin layer, and the oil baked into the bread so it's less swirly-braid brioche and more like, herbed brioche with cheese and tomatoes in. It's very aromatic but the flavor is more mellow.

It's good bread, but I slapped together the idea and I guess brioche is too rich. I guess next time I'll use a unenriched dough. Or at least less enriched.

While that might not be the greatest thing ever, nor even from scratch, I have to tell ya'll that this thing... the mix itself smells and tastes like Krispy Kreme donuts. The batter tastes like the donuts. And I'll let you know how the cake itself tastes after tomorrow (made it for Mother's Day so I can't eat any right now). I imagine it, too, tastes just like the donuts.

I honestly expected it to be a cash grab knock-off almost right flavor. I was not expecting the accuracy in this when I bought it. I'm going to be stocking up, because it also has a cookie method on the side of the box. and also comes in a chocolate glaze variant.

I made parmesan chicken meatballs from one of Alton Brown's cookbooks and they were pretty damn good. You start out making an herb oil and use a bit to cook the chicken meatballs in, take the meatballs out of the pan and make the magical tomato sauce of goodness, pop the balls back in, smother it all in cheese and stick it in the oven to get all melty and happy.
That same cookbook (EveryDayCook) has the best goddamn peanut butter cookie recipe I have ever found in my life. You'll want to double that shit because I've had the whole batch dissapear in a day.
 
Aldi had a frozen spinach and cheese strudel thing. Very good.
