So word from people who know the stables Whitney rode at - the one where even Whitney was like, hey this horse is struggling and walking funny, am I too big for this? - is known for shady and irresponsible practices.

Bitch, please. You don't know shit about shit. In the "old days of knights on horses" people were shorter, and no one, and I mean pretty much no one, could eat themselves north of 200 lbs, and when you're 5' - 5'5" tall, that's a big man. The vast majority of people had to move around a lot and couldn't afford to sit and eat and eat, even the nobility. Royalty is basically the only exception to that, and there's like 10 of those at any given time. Chivalry is fielded by thousands. There were some rare exceptions on height - Edward I (longshanks) and his son Edward II (fag) were known to be over 6' tall, and Henry VIII notoriously was not only around 6' tall, but after a jousting accident aggravated itself in his late 30s, he got up to 400 lbs before dropping dead in his early 50s.
ANYWAY let's just agree that most people were normal sized, because they had to walk or ride horses, there's was no food surplus as we know it in modernity, and no McDicks. Even for nobility, who had the best access to nutrition, Imma put a max weight of 200 lbs, a VERY generous estimate of the day. Now: plate armor. Plate armor for man (30 - 50 lbs) and horse, PLUS padding and jupon, come up to an absolute max of 90lbs for a dude who's over 6 feet tall and a buff 200 lbs. And that's the MAX - like, a dude who's gonna ride horses to death on the regular, and require a mount change 5x plus per battle. A 200 lb man (HUGE for the time) is gonna weigh in, body plus plate plus tack (90lbs), at around 290 total.
Horse can safely handle 20% of their body weight sitting on their backs. A regular sized knight in full armor needs a horse that weighs 1450 lbs (you probably want a heavier horse than that for battle, but that's he safe riding formula).
Jousting armor was heavier than plate armor - up to 110lbs - but was worn for extremely short periods of time, the horses were only ridden for a single straight run, and they were destriers, usually up to 15, 16 hands.
Okay, everyone understand how big horsies need to be to carry heavy things? And what we asked of the horsies so long ago, when knights rode them into battle?
Apollo, the poor soul ridden by Whitney, weighs almost 1400 lbs according to the stables. Let's do math, shall we?
20% X 1400 = 280
Two hundred and eighty pounds. That should be the absolute maximum amount poor Apollo carries on his back, for any reason.
Whitney weighs 385 last we knew, a year ago. She has not returned to a doctor or a trainer since then because it made her cry and she didn't understand how she could have gained weight. She is like over 400 at this point.
So when Whitney, the self centered narc, felt poor Apollo falter beneath her, she actually asked if he was okay, because it was clear to her, a woman who had never ridden a horse before, that he was not okay. And those retarded trainers assumed her he was fine. Apollo could have broken a leg carrying her. Whitney could have easily fallen when he stumbled under her weight. IDGAF about the fatty, but Apollo never asked for this, and it was the responsibility of his trainers to protect him.
