Hot and possibly autistic take here, but I found Alastor to be infinitely more intimidating in the pilot. The fluid animation, the excitement in his voice, and his facial expressions (even though he was still smiling the whole time) made him feel more unpredictable. He didn’t feel like an edgelord. He was genuinely frightening.
The show took that all away and made him an edgy Marty Stu.

Alastor in the pilot felt like the spooky powerful wild card he was meant to be, the stupid "always smiling" thing worked because he was so erratic you never knew if he was a second away from ripping someone in half and feeling nothing about it, his politeness and more classy nature compared to the overgrown manchildren in the cast made him stand out, and his more monstrous moments were when the facade dropped, but resumed as quickly as it had left. Plus, no one knew much about him, making him seem actually mysterious and threatening, making you wonder what he's actually doing here and how strong he is.
Alastor from the show is a fucking loser they keep trying to hype up, failing pretty much everytime until Adam finally oneshots the fucking edgelord, and he still shows back up a couple of seconds later. He swears pretty casually despite him being the one character to never curse once in the pilot, the shittier animation made his movements much more predictable than the zippy sociopath we saw in the pilot, and we see first-hand that he's kind of a bitch when it comes to anyone who isn't several levels below him.
Considering how his only "fights" are completely onesided in either his or Adam's favor, for all we know he might not even have a clue on how to fight, and is just being carried by his powers alone.
Also, is it me, or is he made way more "emotional"? Maybe his very short screentime in the pilot was why we never saw shit like this, but he seems way more easier to bother, easily being annoyed by angel, Vaggie bothering the RADIO DEMON who's enemy is a talking TV into making at least two television ads in one episode, and beefing with the strongest dude in hell over a character he's known for like, five minutes, from the audience's POV.
