It really boggles me too; before this plague hit critical mass the mantra was that we shouldn't be stereotyping actions, interests, and styles to sexes, but now most of the reasons these people give for transitioning is literally applying themselves to these stereotypes and using that as justification, or even as a base for their personality (e.g. mtf tend to adopt a false "bubbly" and "energetic" personality as that's what they think women act like).

Are you a man who likes pink or fashion? Then you must be actually female. Are you a woman who likes car mechanics or wrestling? Then you must be actually male. Absurd.
