It's curious how few games implement that, to my knowledge. The one that comes to mind is Breeders Of Nephilim. I sincerely doubt that the MC devs would do it though. It may have been done already by a mod, though I can't quite recall.
Limited? They have variable jump height, speed, health, color and (if you are making a mule) inventory space. Actually limited genetics is used for pandas and axolotls.Horses actually have it in a limited form.

Back when I played Minecraft, I never understood why they didn't add unique mobs to biomes which have nothing in them or make them more challenging. Jungles? No jungle spider variant (basically retextured cave spiders which spawn above ground in the jungles), no gorillas or piranhas. Mega taiga? Lots of cool terrain generation, but couldn't you have more of the supernatural mobs spawn there? Like a wendigo or some fae creature or maybe have the Illusioner spawn in druid towers in the biome? Mushroom Islands? No sentient fungus monster which attacks you.To make an update:
Add useless mobs and gimmick biomes to taste, ruin the performance for 45 minutes, and serve. If people actually enjoy the feature, ruin it even more in a patch.
- Take a nice QoL feature that players have wanted for years (or take something that literally nobody ever asked for)
- Make it require a crafting material from some shit mob and/or retarded biome
- Totally gimp it in the end, making it practically useless
Baby steps are being made in the field of biome specific mobs like camels and frogs, I assume biomes get added more often because those are most likely generated using a variable logic you can tweak to make the environment flatter, mountainous, etc.They love to add new biomes for new trees and thus more wood variants, but the idea of more mobs just gets ignored. Why not merge the mangrove swamps and frogs with the already existing swamps? Why not add things that make the biomes more challenging or things which improve/change gameplay like they did with elytras and horses? Mojang loves to add features which really don't add anything.
