The thing about that rise is a lot of it is a mix of misreporting intolerances (which are similar to, but have a different cause from allergies, which are only immune responses), and self-reporting allows Munchausen's fucks and helicopter parents to lie about their allergies.
They're also just better understood nowadays since it wasn't until the 1980s that we gave enough of a shit to actually study them.
